This recipe was inspired by Gajar Ka Halwa, a beloved Indian dessert made by slowly simmering grated carrots with milk, sugar, and cardamom until rich and aromatic. In our vegan version, we’ve swapped traditional dairy for a barista-style plant milk, which adds a similar creaminess without overpowering the warm spices. We also add a hint of cinnamon for extra depth. You can adjust the texture and flavour to your liking: cook it briefly for a firmer bite with distinct carrot strands, or let it go longer for a softer, more pudding-like consistency with deeper caramelized notes.
