Sometimes you just feel like having a cup of tea with a fluffy, warm, bakery-style blueberry muffin. With this recipe you can make a super quick version at home - it only needs 2 minutes in the microwave!
In a microwave-safe mug, mix the flour, sugar, baking powder, cinnamon, and salt.
Next add the milk, oil, and vanilla extract. Mix until just combined. Be careful not to over-mix. Then gently fold in the blueberries.
Microwave on high (800 - 900 W) for 2 minutes*, or until a toothpick inserted into the centre comes out clean. If the cake isn't cooked through yet, place it back in the microwave at intervals of 15 seconds. Take care when removing it from the microwave, the mug might be hot.
Let the mug cake cool slightly, add your desired toppings, and enjoy!

I used almond flour as I don't have all-purpose flour for gluten-free, but it worked out as a good substitute. I was in more of a chocolate mood, so I did chips instead of blueberries as well. It was really yummy and just what I was craving! The smell reminded me of a coffee cake because of the cinnamon, which I love! Definitely will be making this again.

Tastes good (I put raspberries instead of blueberries) but my cake did not feel cooked completely, even after cooking it in my microwave for more that 4min in total (my microwave is strong). The edges were well cooked but not the center. I think the recipe would have been better in an oven! Maybe that my mug was too thick if that changes something. I also have to point out that I used almond flour+chickpea flour instead of white flour. I have done the swap on other recipes though and it usually works Anyways, it still made me a good dessert for breakfast!

Hey Malek, thanks for sharing your experience with the recipe! I wonder if the raspberries were juicy causing more moisture in the middle of the cake? In any case, the substitution of almond flour and chickpea flour for white flour might have also affected the texture and cooking time of the cake. Alternative flours have different properties and usually need adjustments in recipes, particularly when it comes to moisture in baking.
If you do give the recipe another try, you can use an oven-safe baking dish and bake in the oven at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Happy baking 🤗

Made all of the PUL mug cakes various times- they are UNFAILABLE*! Even replacing the wheat flour for rice or corn flour or mixing up the taste-giving-ingredient (chocolate, berries, banana) for whatever else is at hand - it still works perfectly and tastes glorious. *(correct word infallible)

Dear Team, I just wanted to let you know, that you not just touch the lifes of people, who want to live in a healthy and mindful way, but sometimes even the ones who could not care less. Well let me explain . . . I do work as a nurse in a home for mentally retarded people, and on my ward, I do care for 8 people with severe autism, who have some difficulties with more or less every aspect of their life. I am lucky enough to work in a nursing home that trys to be a real home for this people, and so we get every meal freshly cooked and do some prepwork ouself. And while we are not a vegan ore vegitarian home, and my patients can not really choose how to eat, its very importend for me to let them have healthy and delicious food, wich brings me to this recepi. You see, I had some cherrys from dessert left over, and normaly I would just give them the cherrys in a bowl and call it a day, but, well, it´s christmastime, it´s cold, most of my patients have no family to spoil them a bit, so I used this recipe (slightly changed because oft the cherrys and I had to use normal milk . . . sorry) to lift up the normal afternoon snack they would get. Took me 5 minutes to make 4 cakes for the patients that where not at home that day, a bit more to bake them in the microwave and they loved, loved, loved it and eate every last crumb from a dish they could not ask for and do not know about. So thank you very much for bringing a bit of joy and fun to those, who never ask for annything.

I used frozen blackberries, light brown sugar, canola oil, and Costco's coconut "beverage" instead of blueberries, sugar, vegetable oil, and soymilk. It yielded a lightly sweet, very moist mug cake!
I love how versatile this recipe is because it turned out even with all my swapped ingredients.
My cake didn't rise much, probably because of all my swap outs. Not sure which swap caused it boy to rise but I'm still happy.

My favourite mug cake of all time. I've done this one at least ten times since I came across it and it always comes out great, dense and really satisfies any sweet tooth. Love all of your mug cake recipes! I've tried making this as a gluten-free version with oat flour (similar to the TIkTok blended baked oats). I made a slightly larger portion, using 1/3cup oat flour + 1 tbsp almond flour, 1/2 mashed banana, 1/2 tsp baking powder, and about 1/4 cup plant milk. It should cook similarly in a microwave

Hi Beth, so sorry to hear about the unexpected texture. Were the listed ingredients and portions used? If so, we suspect the gumminess may have come from overmixing the batter or overcooking.
All-purpose flour when overmixed promotes more gluten to develop which creates a tougher and gummy-like texture. It can be suuuper tempting to mix more, but only mixing the ingredients together until just combined is key to avoid this. Baking the cake for too long can also lead to a rubbery texture. If you end up giving the mug cake another try and your microwave tends to be on the powerful side, we'd suggest starting with less than 2 minutes to start and then trying intervals of 15 seconds until done. For making the top more crispy, brushing a thin layer of sugar in water or oil halfway through microwaving may work. Often the crispy edges in baked goods come from a glaze or paste brushed on while baking 🙂 Another idea may be to bake the cake in an oven-safe baking dish and then let the top broil for a short period of time. Usually, this cake bakes at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean for reference. We hope this helps for now!

After watching your video I really want to try one of your mug cakes and it turned out great! Instead of using blueberries I used raspberries and it still turned out great. Usually mug cakes don't end up working for me but this recipe was delicious :)

Really good if you're looking for something not very sweet; I tried it with frozen blueberries and I don't think I was a very good idea, I'll give it another try with fresh ones

Thank you for the honest review, Sorana, it's very appreciated! Frozen berries are fine, although we recommend having them thaw out a bit and perhaps patted dry if needed to reduce excess moisture in the cake 🙂

I had a question here if we could substitute white whole wheat flour instead of all purpose? What flours can I substitute in general on your recipes if I'm allergic to all purpose? Would I need to adjust water or milk accordingly?

We've had some PUL community members let us know they had success substituting with whole wheat flour. You could add a dash more plant milk since the white whole wheat flour will absorb a bit more liquid than white flour. In general, white whole wheat flour is a good substitute. Other ideas may be oat flour, buckwheat flour, or almond flour. How well they'll work as a substitute will depend on the recipe though 😊

Hey there Alekhya, thank you for your patience with making the recipe and letting us know. How disappointing! We can totally try to help. We have two general ideas on where the oiliness and rubber-like texture may be coming from: 1) Overmixing - When adding the milk, oil, and vanilla extract aim to mix until just combined rather than stirring extra. It can be tempting to get rid of all the clumps but overdoing it can lead to a rubbery texture! 2) Overcooking or heating - Do you know what temperature your microwave is? We'd also suggest cooking the cake in shorter intervals until done so you can keep a closer eye on it. Do let us know if these help with the mug cake! Hopefully, it will be worth the wait 😃

Lovely question, Rita! Oat milk can be used in place of unsweetened soy milk. We opted for soy milk for the added protein but feel free to use your milk of choice 🙂

I tried this recipe out with chickpea flour instead because I wanted some protein in my dessert. It turned out delicious!! I also added some walnuts (highly recommend). I'm now obsessed with mug cakes. Thank you for this recipe :)
The frozen bluberries worked well too. No issues with them.

How to bake the mug cake if you don't have microwave but regular oven? How long and at which temperature (pre-heated?)?

That's a great question, Charlie! If you don't have a microwave, you can bake it in the oven at 350°F (180°C) for 15 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Just be sure to use an oven-safe baking dish 😁

i love this mug cake, i’ve been making it for three years whenever i have a sweet tooth and it does the trick. it’s affordable and not to sweet!
This was delicious! I doubled it (to make some for my partner too) and used frozen blueberries. I baked it in the oven in a small oven safe dish since i don't own a microwave. It turned out perfect😊
Tried this recipe with Pink Lemonade Blueberries. 10 stars!!!! My son who has been sick hasn’t been eating. He took a whiff, tried it, then it was no longer my mug cake lol Thank you as always for a fabulous family friendly recipe. Will definitely make this one again. Fantastic quick dessert! I used 1 tbsp of sugar and that was plenty. Next time, as an experiment, I think I'll add some lemon zest. So good!
I used almond flour as I don't have all-purpose flour for gluten-free, but it worked out as a good substitute. I was in more of a chocolate mood, so I did chips instead of blueberries as well. It was really yummy and just what I was craving! The smell reminded me of a coffee cake because of the cinnamon, which I love! Definitely will be making this again.
Such an easy and quick recipe for a warm, yummy snack or breakfast. Especially in these winter months. :)
Mug cake is a new obsession, thanks to PUL. I only used 1 tbsp of sugar and it was sweet enough. Came out soft and fluffy.

This mug cake is actually my all time favourite comfort food. I will occasionally substitute blueberries for cranberries which does obviously make it much more tart but I love it. Thank you for this amazing recipe!! 10/10 recommend!

Loved this! I used frozen raspberries instead and heated it a little longer and it came out perfect!
Tastes good (I put raspberries instead of blueberries) but my cake did not feel cooked completely, even after cooking it in my microwave for more that 4min in total (my microwave is strong). The edges were well cooked but not the center. I think the recipe would have been better in an oven! Maybe that my mug was too thick if that changes something. I also have to point out that I used almond flour+chickpea flour instead of white flour. I have done the swap on other recipes though and it usually works
Anyways, it still made me a good dessert for breakfast!

Made all of the PUL mug cakes various times- they are UNFAILABLE*!
Even replacing the wheat flour for rice or corn flour or mixing up the taste-giving-ingredient (chocolate, berries, banana) for whatever else is at hand - it still works perfectly and tastes glorious.

I just wanted to let you know, that you not just touch the lifes of people, who want to live in a healthy and mindful way, but sometimes even the ones who could not care less. Well let me explain . . .
I do work as a nurse in a home for mentally retarded people, and on my ward, I do care for 8 people with severe autism, who have some difficulties with more or less every aspect of their life. I am lucky enough to work in a nursing home that trys to be a real home for this people, and so we get every meal freshly cooked and do some prepwork ouself. And while we are not a vegan ore vegitarian home, and my patients can not really choose how to eat, its very importend for me to let them have healthy and delicious food, wich brings me to this recepi.
You see, I had some cherrys from dessert left over, and normaly I would just give them the cherrys in a bowl and call it a day, but, well, it´s christmastime, it´s cold, most of my patients have no family to spoil them a bit, so I used this recipe (slightly changed because oft the cherrys and I had to use normal milk . . . sorry) to lift up the normal afternoon snack they would get. Took me 5 minutes to make 4 cakes for the patients that where not at home that day, a bit more to bake them in the microwave and they loved, loved, loved it and eate every last crumb from a dish they could not ask for and do not know about.
So thank you very much for bringing a bit of joy and fun to those, who never ask for annything.

Mug cakes are the perfect dessert for one! Quick and no clean up!! Anything blueberry is my favorite so this one hit the spot.
I used frozen blackberries, light brown sugar, canola oil, and Costco's coconut "beverage" instead of blueberries, sugar, vegetable oil, and soymilk. It yielded a lightly sweet, very moist mug cake!
I love how versatile this recipe is because it turned out even with all my swapped ingredients.
My cake didn't rise much, probably because of all my swap outs. Not sure which swap caused it boy to rise but I'm still happy.
Can you use almond milk or lactose free milk instead of soy milk?

Wonderful late night treat to satisfy the craving. Came together easily and quickly. I added 2 teaspoons cocoa powder with my frozen berries to make up for the water they produced. Plus a 1/4 tsp maca powder and now you’ve got a LOVELY cake. Thanks PUL team.
My favourite mug cake of all time. I've done this one at least ten times since I came across it and it always comes out great, dense and really satisfies any sweet tooth. I just love how it's a true cake, not just oats with banana mashed together. Sometimes I add whole wheat flour when I don't have all-purpose on my hands and it's all the same amazing!
Love all of your mug cake recipes! I've tried making this as a gluten-free version with oat flour (similar to the TIkTok blended baked oats). I made a slightly larger portion, using 1/3cup oat flour + 1 tbsp almond flour, 1/2 mashed banana, 1/2 tsp baking powder, and about 1/4 cup plant milk. It should cook similarly in a microwave

I really couldn't believe how good this came out. I was worried if my cup (thin and tall) would make it worse somehow, but it still came out great even with my centuries old microwave. This was super delicious, changed blueberries to frozen black currant berries. The sweet and souresk experience was something far beyond of our usual after breakfast delight XD

I just made this, and it was incredible! I was instantly transported back to my childhood eating my grandma’s huckleberry coffee cake while it was still warm from the oven. I will definitely make it again! I didn’t make any changes, and it came out perfectly.
Just tried this with a few changes, I make my own oatmeal flour and I added organic maple syrup rather than sugar and used raspberries. Super quick and easy, love your quick easy clean foods. note: I added a little more flour since the maple syrup brought in more liquid.
