GOD TIER RECIPE! This was SO delicious and so easy!! Also an excellent way to use the fruit languishing in my freezer. Holy crap this cake was incredible. My housemate suggested using rhubarb on top and I can't wait to try it!

Simple to make and such a lovely delightful flavor ! Mine did come out a. It dry (could totally be my oven) but considering adding a bit more milk or veg oil next time. Timing was very funny of that โ€œTea Partyโ€ recipe collection as I had a tea party to go to (how cute is that ) and everyone did love it!

How fun that the timing worked out perfectly for your event, Elyse! Adding a little extra milk or oil next time should help keep it moist. If it helps, we also used top-bottom heating without the fan and found it helps keep the moisture in ๐Ÿ˜Š

On her recipes I usually use 3/4 of sugar, cause theyโ€™re balanced already.

I made this one with blueberries and it was a big hit! Amazing! Iโ€™m wondering now if I could make this one with ginger and lemon pulp, after making some ginger lemon shots! Would be a great way to use up the pulp!

Hey there, Deborah, adding the pulp is a fun idea to add a lovely zing to the recipe. We imagine you can mix the ginger-lemon pulp with the wet ingredients, before adding the dry. The cake will perhaps be a bit more dense and you might have to play around with the sugar amount to balance the flavours to taste. Let us know how it goes if you try it out ๐Ÿค—

If used fresh berries, does it need more fluid?

Hi Marijana, fresh berries release less moisture, but we don't think you need to adjust the ingredients. Although, the cake might bake slightly faster if using fresh berries. Start checking for doneness 5 minutes earlier than the original recipe suggests to prevent overbaking. ๐Ÿค—
