Yum yum! I did not have chocolate chips. I used instead 150g chopped chocolate (70%) and the result was great! The mixture was enough for 15 mini muffins, so I got three extra as an unexpected bonus and that's never a problem. ;-)

I made a batch together with a banana bread from another vegan virtuoso and I am delighted to have such yummy snacks on hand for my family during the week! My one year old absolutely loves these muffins, I cut one in half and put a small dollop of peanut butter on each half, spread and watch her eating with glee while I know she is eating million times healthier snack than I could buy in a shop. On Mondays I bake muffins for our choir rehearsal, and I've made so many different kinds, but these get requested again and again and again - and I get all the cred 😋, but it's you, PUL team, who should share at least 1/2 with me. Just as others have said, this recipe is quick, easy, uses pantry staples, and the result is much more than tge sum of its parts! Caramelised and crunchy on top, light and cakey and with so many tiny chocolate bits inside (I use tiny, strong choc chips) -just one muffin is enough.
I'd like to add that I really enjoy the set up of this app, it makes me feel super organised by putting the ingredients down separately and then again step by step. I'm enjoying actually cooking as I never have before, as well as the results on my lips, health, and hips. Thank you PUL🙏

Hey Govinda, we haven't tried ourselves so we can't say with confidence! You could try using an all-purpose gluten-free flour blend (like Bob's Red Mill) for a gluten-free version. If you experiment with the recipe, we'd love to hear how it goes 🙂

I have made these twice now and each time I tripled the recipe to share with others! They turn out so perfectly and everyone I've shared them with loves them. Such a quick and easy recipe! I would definitely recommend putting the chocolate chips in on step 4 when the flour is added as to avoid them sinking to the bottom like mine did.

• 200g chocolate instead 240g • 50ml maple syrup to replace the entire amount of sugar listed in the recipe
It is not very sweet, as expected. But the kids love it anyways :)

Delicious and super easy to make. Next time I might use a bit less sugar (maybe it's a bit too sweet because I used a mix of dark and milk chocolate chips.) I love the cakey texture.

Easy and good :) Swaped the oil for applesauce and it turned out great. My oven seems to be a bit faster, i'll check on them after 20min for the next time. Definitely not the last time doing these. Thanks for the recipe!

In case it helps, we use conventional heat (the symbol on our oven shows the top and bottom heating without the fan) with the pan in the middle rack of the oven. If you use a different oven setting or placement of the pan, the baking time may vary 😊

They came out really nicely, though next time I'm going to use less chocolate chips. After 25 minutes the toothpick came out clean, but they still looked very white. Any ideals how i could make them golden a little better? I didn't want to leave them in longer as the 25 minutes really were perfect for the dough texture.

Hey Hanni, glad the muffins were enjoyed! To achieve a more golden colour you could place the muffins closer to the top heating element if possible. Alternatively, you could gently brush the top of the batter with a bit of non-dairy milk, melted vegan butter, or coconut oil to help get a richer colour 😊

While i was making the batter I ran out of baking powder, which gave me an idea. I think it would be an awesome function in the app if I could add ingredients to the grocery list, for example by tapping longer on an item, whilst in the recipe / make view. Otherwise I love the app so far!
