Given the comments from others I increased the spices. Also, I used 175g of canned pears instead of fresh. I increased the acid in the milk to 1 Tbsp of lemon juice. To the topping I added 1/2 tsp cinnamon. Then I increased the spices to 2 tsp cinnamon, 1/2 tsp ground ginger, 1/4 tsp nutmeg, and 2 tsp vanilla. They turned out wonderfully moist and flavorful.
Made them for my grandma, and she absolutely loved it. I made two small changes, used almond milk instead of soy milk, and 1 1/2 pear instead of 1. They came out perfect. I chopped the pear in different sizes, so we got nice bites out of the big ones, and the small ones kind of melted into the batter. Will definitely make them again.

They were good, but I'm adding more pear and spices next time. I think I'll also add the pear pieces directly to the tin instead of in the batter mix, to distribute them more evenly.

Lol I wish I had read the comments before. My pear variety was too sweet (pears in Mexico aren't always great) and needed the lemon zest mentioned below. I also had to use half normal flour half oat flour and not sure it was the best combo. I still loved them though and will make them again following the suggestions below.

1 pear was not enough fruit for me, I used 2 next time. Otherwise for the second time I modified the recipe to be more balanced. The proportions of the crumbs are not perfect I used more butter and some vanilla. For the batter I additionally used some lemon crest to balance the sweetness of the pears. However I felt the baking soda after all, so I used half a teaspoon of apple pie spice mix.

I would only add a little side note if I may... Maybe it would be useful to add the actual mesurement for the pear, since there are so many varieties and sizes around, just to make sure one does not put too much or too little of it in the batter 🤗 just a tought though....

We recommend using soy or pea milk for this recipe, as the protein in these milks is what allows the milk to curdle to create vegan buttermilk, this helps give the muffins a fluffy texture. However it should still work out okay if you have another milk on hand, but they might not come out as fluffy. If you experiment with oat or almond milk we'd love to hear how it goes☺️

Hey Tiana and Tahnee! You can definitely make a loaf instead—we recommend using a 9x5-inch (23x13 cm) loaf pan. Just keep an eye on the baking time, as it will likely take around 45-50 minutes to cook through. You'll know it's done when a toothpick inserted in the center comes out clean. 🤗
