Hey Valerie, we wouldn't suggest substituting the xanthan for cornstarch. You can omit the xanthan gum completely. It helps with the flexibility of the cake, but we have tried versions without it and found they were just fine. Hope you enjoy the cake ☺️

Hello, can we swap xanthan gum with agar agar powder and using the same quantity? I'm not sure I can find the xanthan gum but would love to try this recipe 🙌

Hi Angélique, that's a great question! We wouldn't recommend swapping the xanthan gum for agar agar. The xanthan adds a bit of flexibility to the cake. You can omit it completely if you can't find it; the cake will be slightly less flexible, but if you are gentle with the rolling, it should still work just fine. We tested the recipe numerous times, and although we had success without xanthan, we generally found it helped overall. Let us know if you try the cake out!
