Directions

  1. In a large bowl, cream together the coconut oil and brown sugar using a fork.
  2. Then add the milk, cocoa powder, maple syrup, vanilla, baking powder, baking soda, instant coffee, and salt. Mix well. The mixture might look a bit clumpy, and that's okay*.
  3. Preheat the oven to 350°F (180°C). Add the flour to the bowl and stir until just combined. Careful to not over-mix.
  4. Then gently fold in the chopped chocolate.
  5. Form little balls out of the dough and evenly distribute, about 2 inches (5 cm) apart, on a lined baking tray.
  6. To decorate, add a few bits of chopped chocolate to the top of each cookie. Bake on the middle rack of the oven for 12 - 14 minutes.
  7. Let cool on the tray for a bit before transferring to a wire rack to cool completely. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead. The coconut oil needs to be solid for this recipe, and not melted. If the oil is soft, place it in the fridge until hardened.
  • * If the temperature is warm where you are, consider chilling this mixture in the fridge for 30 minutes to firm up, otherwise, the cookies may spread too much when baking.

Storage

  • Store in an airtight container on the counter for up to 5 days or in the freezer for up to 1 month.

Planning to make these. What is the difference between brown sugar and, for example, white sugar? And do you mean the Dutch “basterdsuiker” with brown sugar or something else? Hey there, Manon, it can be confusing with so many different types of sugar out there! Brown sugar has a bit of molasses, which gives it a richer flavour and makes baked goods tender and chewier compared to white sugar. For this recipe, you can use the Dutch "basterdsuiker", which is a refined sugar mixed with inverted sugar and is available in light, dark, or white varieties. We generally use the "lichte" one but have also used the "donkere" one as a substitute 🤗

The gluten in the all-purpose flour helps give the cookies a fluffier texture and structure that buckwheat flour may not offer as it's gluten-free. A mix of gluten-free flour generally works better than using just one gluten-free flour on its own (Like Bob's Red Mill Gluten Free Flour blend). These are VERY tasty but the two pans I made both spread. I even put the second pan in the fridge for a bit before I baked but they came out all smooshed LOL. My son and I still enjoyed. I’m thinking maybe I need to make the ball a bit smaller and freeze next time?

Hi there, Andie, so glad you liked the cookies' taste 🫶 The batter spreading out might be because there was too much coconut oil in the batter, or the batter was too warm. When the coconut oil is too warm, it can cause the cookies to spread and 'melt' too much while baking. If the temperature of the room is hot where you are, consider chilling this mixture in the fridge for 30 minutes to firm up. It also helps to weigh the ingredients in grams for more precision - it's much more accurate than using cups and tablespoons. We hope this helps in case you decide to give the recipe another go! 😊

These bad boys taste phenomenal. I will say they are a cakey type of cookie; however, they are delicious, nonetheless. I actually remember making these cookies three years ago, and they spread out so much! I remembered this once I started the recipe and couldn’t believe I had forgotten. Remembering this, I decided to refrigerate the cookie dough for 20 minutes to allow the coconut oil to harden and make the process of rolling them into balls easier. Soooo definitely do this recipe exactly how they have it. I didn’t have a few ingredients so I subbed them (vegan butter instead of c. Oil, cane sugar instead of agave) and the consistency I got was nothing like the images (tastes amazing) but baking made it dry and brownie-like.

I used the dough and made them into “raw” brownie bites. Rolled them into coconut flakes and some in chopped cashews. Delicious. But definitely wanted to cookies 😂

Hey Caroline! Cookies that come out cakey often mean the fat, sugar, and flour ratio is off - usually with too much flour being the culprit. Did you measure using the gram and mL amounts listed, or using the cup and Tbsp amounts? In case you used the cup measurements, and if you'd like to make the cookies again, it could help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added 🙂

Hey Rachel! I imagine you can, but just a heads up that WW flour can make the cookies seem drier and it produces a more coarse texture. If they have it at your local grocery store, you might want to consider "white whole wheat flour" for a texture and flavour that more closely matches the original :) Enjoy!

These are soo good ! We substitute Earth Balance butter substitute for the coconut oil. We noticed coconut oil has 12grams of saturated fat per tablespoon compared to 3grams per tablespoons of Earth Balance.

You could thaw the dough overnight in the fridge or on the counter briefly if it's warmer where home is for you. Let us know how it goes if you're able to experiment it! They are absolutely delicious! I decided to try and used mostly (3/4 more or less) ground walnuts as a flour base and they turned out really nice. Not so gooey but very soft and with a hint of nutty flavour. Very much autumn vibe :) Next time will probably make a double batch just to save time :D

On top I put chocolate and chopped hazelnuts. It was an easy recipe and the best part was that you can make it with only a fork and a spoon.

Turned out so good! I used 3 Tbsp of honey in place of maple syrup and half a Tbsp of corn starch. Corn starch makes the cookie crispy on the top.

Hi Jaymi! Did you use refined coconut oil? Using refined coconut may be helpful to reduce the coconut smell. It may also be worthwhile to double-check your coconut oil is still fresh as an offputting smell may be a sign it's gone rancid. So glad you enjoyed the cookies regardless 🤗

Hi Donna! We can't say with certainty as we haven't had a chance to test it out with gluten-free flour. With that said, a mix of gluten-free flours usually works better than using just one flour on its own. Another incredible recipe you guys! I struggled a bit making it as my coconut oil was completely liquid and then way too hard after I put it in the fridge but the final result was well worth it. I used white sugar instead of brown and honey instead of maple syrup as I had run out of them and they turned out perfect (in case someone is in a similar same situation). Another win for PUL!

I think I fell in love when I ate these cookies ♡ Before I was vegan, cookies were my favourite thing to make, and after going vegan, I thought I would never find the perfect cookie recipe again. But after trying these, all my cookie concerns have gone away! These are without a doubt the best cookies I have ever tasted, and they're super simple to make too! The flavor is really good on these cookies and they're good when warm out of the oven, but were a bit on the dry side when cooled. We followed the recipe exactly, but the texture was a lot more crumbly than the dough in the video.

Thanks for the honest review, Victoria! Cookies that come out more dry and crumbly often mean there is too much flour in comparison to oil and sugar. Did you measure using the gram and mL amounts listed, or using the cup and Tbsp amounts?

In case you used the cup measurements, and if you'd like to make the cookies again, perhaps these tips might help: ensure that the flour is not too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added.

Since the recipe calls for "packed" solid coconut oil and "packed" brown sugar, we imagine the amount of "packing" could also be what caused the difference. Adding more coconut oil and brown sugar - or in other words, "packing" the cups fuller - should help ☺️ If you enjoy chewier cookies, you can also increase the amount of maple syrup added by a tbsp or two. We hope this helps for now!

These cookies are delicious! I made a double recipe and brought them to a potluck and almost all were eaten! Also no one guessed that these were vegan :-). By the way I used vegan margarine instead of the coconut oil because I didn't have that and it turned out great. This is definitely one of my favorite recipes!

I watched the video before baking them and Sadia stated clearly that the coconut oil should be solid, but summer has been intense over here lately so my coconut oil was completely melted haha. Oh my god, I've made this recipe like a 100 times already. It's so easy and usally I have all the ingredients somewhere in the house so it's never any trouble for me to make them. My family is also obsessed with them, the cookies never make the night haha. The outside it crunchy, the inside chewy and the chocolate also gets hard after a while, which adds another crunch to it. I am just completely in love with them :)

Using the recommended substitution amounts on the sweeteners package would be a good start. Perhaps adding some more soy milk may help with the moisture and make up for the lost sugar bulk as well! Hi Reham, great question! We can't say for certain as we haven't tried it before, but with some experimenting, it may be possible 😃 For whole wheat flour, you should be able to substitute around a third to half of the all-purpose flour with whole wheat without major changes. Adding more than this will likely require more liquid and the cookies will be denser.

For oat flour, we'd also recommend trying half oat and half all-purpose flour to start, and see if you like it. Then try the next time with all oat flour. All-purpose flour has gluten in it, which helps give it the classic structure of a cookie. Oat flour might not offer this, but it might be a fun one to experiment with 🙂 and if you do, let us know how it goes!
