There are many stories on where the name 'cowboy cookies' comes from. Some say they were enjoyed by cowboys back in the 1800s when they were working a long day out on the trail. Others claim the cookie recipe was developed in Texas, where a lot of cowboys lived. Both theories sound good, but the cookies taste even better. Filled with chocolate chips, pecans, shredded coconut, oats, and cinnamon, this cookie is sure to be a crowd-pleaser!
Line a baking tray and preheat oven to 350°F (180°C)*.
Add the margarine, brown sugar, and granulated sugar to a large bowl. Whip with an electric hand mixer or cream using a fork.
Add the applesauce, flaxseeds, cinnamon, vanilla, baking powder, baking soda, and salt. Whip again, until everything is well combined.
Add the flour, oats, and shredded coconut. Gently fold these into the dough with a spoon until partially combined.
Fold in the pecans and chocolate chips. Stir again until just combined, but try not to over-mix.
Scoop up a ¼ cup of the dough and roll it into a ball. Then flatten to create a cookie that's about 1½ cm thick**.
Place the cookies on the prepared baking tray, leaving about 3 cm space between each cookie. If desired, press some chocolate chips or chopped pecans onto the top of each cookie before baking.
Bake in the centre rack of the oven for 12 - 14 minutes, or until lightly golden. Let the cookies rest for a few minutes on the baking tray before transferring them to a wire rack to cool completely. Enjoy!

omg, they're so good!!!! first, i was sceptic because the dough seemed so dry, but they turned out really well. take care to not leave them in the oven for too long.
I substituted half of the butter with coconut oil and used a machine with dough hook for the last steps to fasten things up. worked well.

I used half coconut oil and half real butter in place of the margarine. I also only did the brown sugar and omitted white sugar completely. Cookies held together well, rose a little and spread just a smidge. They were more than enough sweet. I enjoyed one while still hot and cakey with a fork. 🥥🍪

These cookies are soooo incredible good. I've made some changes, used half vegan butter, half coconut oil, just the brown sugar (it's enough sugar for my taste) and a little more applesauce. If freezing, we'd recommend to shape the dough into individual cookie portions and place them on a baking sheet lined with parchment paper. Once frozen, transfer the cookie portions to a freezer-safe container and when ready to bake, simply thaw the desired amount of dough in the refrigerator overnight before baking as usual. These are amazing! I substituted gluten free plain flour for all-purpose flour 1:1 ratio. They were perfect! Our new favourite cookie. Would 100% recommend sprinkling with sea salt before you bake. I baked six cookies and froze the rest to enjoy another time.

Excellent! I used some butter for that's all I had on hand, and reduced the sugar to 80 grams. I used the measurements in grams ans the dough was not very sticky so I used elbow grease to incorporate all the flour and add ins and make a big ball. Also, I used walnuts instead of pecans. I finally make 30 balls that I flattened into cookies. They are absolutely delicious and sweet enough! My kids gulped them down!! Thank you so much!!

This cookie is so so delicious! Since I didn’t have vegan chocolate chips on hand, I subbed for a vegan chocolate bar (3 ounces) roughly chopped.
Next time, I’ll only bake the cookies for ten minutes to achieve the slightly underbaked crumb finish I prefer. I will definitely bake these again!

I made them and they turned out amazing. I didn't add coconut and replaced pecans with walnuts. They had a thin but surprisingly crisp outer layer but soft texture inside. Had them for breakfast with a glass of soy milk. Yummm!!

We haven't tested omitting the granulated sugar, but imagine the cookies will be chewier and less sweet. My go-to recipe for weekday snacks and my partner LOVES them too! I bake them about every two weeks and store most of them in the freezer, and just grab one or two on the way to a full day at work. So yummy, so convenient and hasn't failed me yet regardless of nut/fruit/choc combo! I always use about 1/3 less sugar, and switch out the shredded coconut for some dried fruit like cranberries. Since the coconut flakes add a fair bit of bulk to the cookies, we'd recommend replacing them with some dried fruit (such as raisins), a touch more chopped nuts, or some extra chocolate chips. You could omit them all together without the additions for a less dense cookie as well. They'll likely have a less sweet taste and lighter texture in this case. Do let us know how it goes if you experiment with it 😃

My wife & I have been long time fans of yours! This has been my go-to cookie recipe. I love that the ingredients are just so much more wholesome than most cookie recipes out there, & let's not forget how AMAZING they taste either.
It was my birthday 2 days ago & I kind of wanted a cake, well cookie skillet, that was on the healthier side. The coconut & applesauce in this recipe actually inspired me to make a couple of tweaks to your recipe. Not sure if you're familiar with the flavor "ube" (purple yam). Being Filipino, ube desserts are HUGE in my culture, as well as in other Pacific Islander/Asian cultures. I swapped the applesauce for ube jam, swapped the 2 tsp of ground cinnamon for 2 tsp of ube extract, I blitzed the oats to make it more of a flour consistency, & changed the regular chocolate chips to white chocolate chips to kind of match the flavor profile a little more. The white & purple colors looked amazing! Because the ube jam is a little drier than applesauce, my dough came out a tiny bit crumbly. But then I remembered in order to create a flax egg, we would normally add about 3 tbsp of water, so instead I just added 3 tbsp of coconut milk & the dough came together so well. I put the entire mass of dough into a cast iron skillet & baked for about 20 minutes (I kept watching every 5-10 minutes to make sure it didn't burn it). I then served it with coconut milk vanilla bean ice cream.
OMG! Heaven! It was a hit with my wife & family!

Me and my family really enjoy these cookies - I subbed the pecans with almonds as pecans are not widely available where I live, but loved the taste nonetheless! These are the best cookies ever. 🍪❤️ Their taste and textures are just perfect. I swap the flour to oat or spelt one, as I am allergic to wheat and it still works in this recipe! They are very nutritious and filling. Often I have them as second breakfast or afternoon snack.

Amazing! They were doughier and smoother than I imagined, and soo tasty! I added a bit less sugar, coconut oil instead of margarine, and probably a quarter cup of water to the dough, and they were so good! I will be making these often! Thank you PUL Team :)

I do them with regular unsalted butter and it works perfect. Just remember to use room temperature butter so that you can easily mix it with sugar and other ingredients.

I loved the taste but for me when I baked them, they crumbled. I don't know what I did wrong. It was sad but other than that I loved the crumbs too

Hello, Antara! Thanks for the review 😊 Cookies that come out more dry and crumbly often mean there's too much flour in comparison to fat and sugar. Did you measure using the gram/mL amounts listed, or the cup/Tbsp amounts?
In case you used the cup measurements, and if you'd like to make the cookies again, perhaps it may help to ensure that the flour is not too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added!

These are so good! So soft and delicious. I swapped the pecans for hazelnuts (what I had on hand) and the result was definitely a crowd pleaser. Which was unfortunate as I didn’t want to share :)

These are great and makes a great gift for any occasion! I've made them for family members who aren't vegan and they really enjoyed them. I followed the recipe, taking my time with each step and they came out soft and delicious. After doing the recipe 1-2 times, you'll get used to baking them. Sometimes, I leave out the chocolate chips and they still taste delicious. I like these with any black tea and black coffee. Much love from Los Angeles, California!

Something didn't work. The texture of the dough was dry and didn't hold together. I followed the recipe. I added a lot more oil to make to make the dough hold together. I also found them very sweet. This is the first time I am baking cookies without eggs. I guess next time I would use less flour ( I am in Canada and use all purpose flour)

Hello Patrizia, how disappointing to hear! Did you use oil in place of the apple sauce or was it in place of another ingredient (such as the margarine)? Being sure to use soft margarine, double-checking ingredient portion sizes, and using your hands to gently mix the ingredients together in steps 4 and 5 while being mindful not to overmix are a few ideas we can think of. Do let us know if you give the recipes another try or if you have any other questions! 🙂

Hi! I had the same problem the first time I made these cookies. However, I tried a second time and I looked at the grams only and whipped the butter mixture for much longer. Now they turn out great everytime! They're truly café-style cookies 🥰

I recently made these to take to a potluck wedding and at least 3 people asked me for the recipe, and they were the first empty plate of food there. They are always a hit no matter the audience. A tip for people in the UK or other places which only have sweetened apple sauce with chunks: buy baby food! There is often plain smooth apple puree in sachets in baby food sections. I have even replaced it with pear puree and reduced the sugar one time when I couldn't find any apple puree.

omg, they're so good!!!!
first, i was sceptic because the dough seemed so dry, but they turned out really well. take care to not leave them in the oven for too long.
I substituted half of the butter with coconut oil and used a machine with dough hook for the last steps to fasten things up. worked well.
I used vegan butter because I could not find vegan margarine and I used walnuts instead of pecans. They turned out very good!
Made substituted corn flakes for coconut, candy coated choclate for chocolate chips and 1/2 cup dried cranberries and 1/2 cup pumpkin seeds due to allergies etc my kids school. We'll received it kids and adults alike.
These cookies are easy and so delicious! Thanks for the recipe!
I used half coconut oil and half real butter in place of the margarine.
I also only did the brown sugar and omitted white sugar completely.
Cookies held together well, rose a little and spread just a smidge. They were more than enough sweet.
I enjoyed one while still hot and cakey with a fork. 🥥🍪

But I can say it is the perfect recipe, I was looking for something like this for such a long time. I've cooked half a batch, what can I do with the other half until tomorrow? These are amazing! I substituted gluten free plain flour for all-purpose flour 1:1 ratio. They were perfect! Our new favourite cookie. Would 100% recommend sprinkling with sea salt before you bake. I baked six cookies and froze the rest to enjoy another time.

Turned out great!! I only used brown sugar, switched margarine for vegan butter and used hemp seeds instead of flax meal since it’s what I had in hand. Will try again with original recipe, but loved the rise and taste !!
I experiment a lot with vegan (chocolate chip) cookies and oftentimes the texture is more cake-like or too soft... But these are just like regular cookies! So so good! 💚

I made a batch 2 days ago and poof they're gone already and kids are asking for more! Some swaps: I only had whole grain flour and almond flour, half a stick margarine so used that and coconut oil, no apple sauce so I mashed up a large banana, still came out great!

The only change I made was to substitute the pecans for macadamia nuts.

Excellent! I used some butter for that's all I had on hand, and reduced the sugar to 80 grams. I used the measurements in grams ans the dough was not very sticky so I used elbow grease to incorporate all the flour and add ins and make a big ball. Also, I used walnuts instead of pecans. I finally make 30 balls that I flattened into cookies. They are absolutely delicious and sweet enough! My kids gulped them down!!

This cookie is so so delicious! Since I didn’t have vegan chocolate chips on hand, I subbed for a vegan chocolate bar (3 ounces) roughly chopped.
Next time, I’ll only bake the cookies for ten minutes to achieve the slightly underbaked crumb finish I prefer. I will definitely bake these again!

My go-to recipe for weekday snacks and my partner LOVES them too! I bake them about every two weeks and store most of them in the freezer, and just grab one or two on the way to a full day at work. So yummy, so convenient and hasn't failed me yet regardless of nut/fruit/choc combo! I always use about 1/3 less sugar, and switch out the shredded coconut for some dried fruit like cranberries. My wife & I have been long time fans of yours! This has been my go-to cookie recipe. I love that the ingredients are just so much more wholesome than most cookie recipes out there, & let's not forget how AMAZING they taste either.
It was my birthday 2 days ago & I kind of wanted a cake, well cookie skillet, that was on the healthier side. The coconut & applesauce in this recipe actually inspired me to make a couple of tweaks to your recipe. Not sure if you're familiar with the flavor "ube" (purple yam). Being Filipino, ube desserts are HUGE in my culture, as well as in other Pacific Islander/Asian cultures. I swapped the applesauce for ube jam, swapped the 2 tsp of ground cinnamon for 2 tsp of ube extract, I blitzed the oats to make it more of a flour consistency, & changed the regular chocolate chips to white chocolate chips to kind of match the flavor profile a little more. The white & purple colors looked amazing! Because the ube jam is a little drier than applesauce, my dough came out a tiny bit crumbly. But then I remembered in order to create a flax egg, we would normally add about 3 tbsp of water, so instead I just added 3 tbsp of coconut milk & the dough came together so well. I put the entire mass of dough into a cast iron skillet & baked for about 20 minutes (I kept watching every 5-10 minutes to make sure it didn't burn it). I then served it with coconut milk vanilla bean ice cream.
OMG! Heaven! It was a hit with my wife & family!
