I would like to make this recipe for my birthday, but I was wondering if it is possible to make it in a loaf type pan instead of making cupcakes?

Hey Irmen, we haven't tried but imagine you can bake it in a loaf pan. We have heard successful comments from people baking the batter in an 8-inch round cake pan. For a loaf pan, adjust the baking time to about 45 - 55 minutes, and check with a toothpick for doneness. Enjoy your birthday treat 🥳🍰

Hello, imp question- can I use the leftovers after juicing carrots in my centrifugeuse( or mix of oil for them+ apples) instead of grated carrots ?
Grating them is so burdensome and juicing is practically the only way I eat apples and carrots. Esp that someone mentionnés below it was to gooey, I’m asking if o should change sth adding naturally less moisture version of carrots :)

Hiya Luiza, using the leftover pulp from juicing carrots and apples could work as a substitute for grated carrots, especially if it's on the drier side. Just be sure it’s not too dry, or the cupcakes might turn out a bit less moist. You might want to tweak the applesauce a little to keep things balanced. Happy baking! 😊

Can the cakes be frozen without frosting do you know?
I'm moving house next week and want to turn the last of my carrots and some apples into cupcakes for moving day without having to bake them the night before we move!

Hey Alexis, you definitely could freeze the cupcakes without frosting! Once baked and cooled, store them in an airtight container or wrap them tightly, then freeze. Simply thaw them at room temperature the day before moving and frost them if desired. Best of luck with the move 🫶✨

PUL is my go-to app for baking especially. Almost all recipes are foolproof.
Unfortunately, I can’t say the same for this recipe. It turned out sooo gooey that I ended up baking the cake with a foil over for 45 minutes and still it wasn’t baked through.
It tasted really good except the uncooked bottom, I just don’t know where I went wrong with the recipe. Maybe the type of carrots make a difference (I used the usual ones from the German supermarket) because all measurements were followed and oven instructions were followed.

Hey Preeti, aw we're honoured to be a go-to resource! It sounds like the issue may have been with the moisture content in the carrots, as the type and water content can vary. If the carrots were very juicy, this could have added extra moisture to the batter, leading to a longer bake time. You could try lightly squeezing out any excess moisture from the grated carrots next time if you find them super juicy 😊

This is one of my favourite things to bake and my friends and family enjoy eating it - it’s a win-win! Since I consume less sugar, I skip the frosting entirely, still has great sweetness from the Dutch carrots. I serve it with vegan whipped cream for those who wish to eat it that way. Really delicious! The spices were amazing and the cupcakes were very well received. I found the frosting to be way too sweet though, so I added more creme cheese and butter. Next time I will use less sugar.

Hey Saoirse, aw we're so happy to hear that you're enjoying the app! We haven't tested it out, but you may be able to substitute brown sugar for coconut sugar. The cupcakes might end up denser or drier. Brown sugar has molasses which adds moisture whereas coconut sugar doesn't. 🙂 Let us know how it goes if you test it out!

Hi, these cupcakes are so good! I have a question about the frosting. It did not become smooth, even after about six minutes of mixing. It looked a bit like it curdled. It still tasted good and I used it, but do you have any idea what could be causing this? Temperature of the butter maybe? I used butter at room temperature.

Hey there, Laura! Curdling in the frosting might happen when the ingredients are at different temperatures or when they're overmixed. If you give it another try, ensure both the vegan cream cheese and vegan butter are at a similar, room temperature before blending. Also, be cautious not to overmix, as excessive mixing can cause the ingredients to separate. If curdling still occurs, you can try briefly refrigerating the frosting and then gently re-mixing until smooth. We hope this helps for now and happy baking 🤗

Hey Nieves, we haven't tried but imagine you can use this recipe in a cake pan to make a cake. The baking time will change so just be sure to keep a close eye on it. When a toothpick inserted into the centre comes out clean the cake is done 🤗

Hey Divya, a neutral-flavoured oil, such as more vegetable oil, makes a good substitute for applesauce. You could also try mashed bananas if you don't mind a mild banana taste.

Yum! These are easy and delicious. I’m glad they don’t use walnuts or raisins in the recipe. No doubt you can easily add if you wanted. I just don’t like crunchy things in my cupcakes.
I used only 2 cups of powdered sugar and it was perfect for us.
