Very delicious. I loved the pudding itself, but I didn’t care for the orange coulis. I’d like to remake the pudding with a different fruit next time. Any suggestions that should work? As I’m assuming the water content plays a part in juicing the fruit.

This honestly saved my Christmas day, even though we only made the rice pudding base (will try the orange coulis ASAP, though).
I'm currently battling a chest infection and I am genuinely the most sick I can ever remember being. My partner made from scratch a non traditional, Indian inspired, Christmas dinner of saag aloo, coconut yoghurt & tikka marinated tofu kebabs, onion bhajis, and naan bread, plus a bunch of other things for the meat eaters. Something I would normally really enjoy (he's an excellent cook) but I could only manage a few bites. Later in the day, he fired up this app and made me this rice pudding, which I'd favourited but not tried yet. It was delicious, easy to eat with my sore throat, and just the kind of warm comfort food I needed. The highlight of my Christmas day for sure! And bonus - there are leftovers if I feel up to it later.

Hi i tried this recipe and everyone love it, specially at my job. They like so much the orange couli, so i wonder which would be the shelf life for the couli. Does it need to be refrigerated all the time? or just once is opened? in the case that is in a preserved jar and well sealed. So glad to know the orange coulis was a hit Helga! The sugar content in the coulis here does help with preservation, but it's on the lower side for long-term storage. If it’s sealed in a preserve jar and properly canned, it can be stored at room temperature until you open it, but I can't say with confidence for how long without testing it. If you want it to last a few months, you can consider adding more sugar to it. After opening, refrigerate and use within 3-5 days. And thanks for your kind words about the app, that made my day! 😁

Hey Fam, for rice pudding, the best type of white rice to use is usually a short-grain or medium-grain variety. We used medium. These types of rice have a higher starch content compared to long-grain rice, which helps to create a creamier texture in the pudding as the grains release their starches into the liquid during cooking. Hi Kaila, we didn't test freezing it so I can't say for certain. I suspect the texture would change but otherwise the rice pudding itself (minus the coulis) should freeze alright. You might just need to add some more plant-milk to rehydrate it when reheating. Let us know how it goes if you do try freezing.
