Made this as muffins recently, as I don't have a donut baking pan, and used lemon juice instead of yuzu juice. I made 9 small muffins and baked them for 25 minutes.
They came out great! Moist texture, and really good. Flavour-wise, I couldn't taste much of the lemon or the matcha, I think I'll include the zest in the batter next time, and maybe use more matcha powder. Still really good, though.

Wow! I've made vegan baked donuts before but these are my new favourite. The flavour combination was amazing! I would never have thought of pairing matcha and lemon!

These doughnuts are to die for. Sooo good. I used lemon juice instead of yuzu but amped up the zest to make it more pronounced. I also added lavender to the glaze. It pairs very well with the matcha.

These were delightful! I don’t have a doughnut pan, so I used a mini muffin tin, and it made 12. Baked them for about 14 minutes. I didn’t have yuzu, so I used lemon juice in the cupcakes, but for the glaze I ground up freeze dried strawberries in my mini food processor and added the powder to the glaze, then sprinkled the bigger bits on top! Not only is strawberry and matcha a great combo, it was so pretty with the green and pink, like a dose of spring!
These are so delicious. I omitted the yuzu juice as that isn't something available where I live. I did find them a bit on the dry side. Could I maybe add an extra tablespoon of oil, or should I do extra mylk? Nonetheless, my husband and I still loved these!

Hey Aileen, thanks for sharing your experience with the donuts. You could use lychee juice, orange, or fresh lemon juice in place of the yuzu juice if you'd like. Otherwise, we'd recommended increasing the amount of soy milk proportionally for more moisture if omitting the yuzu juice 😊

These donuts are great! I used lemon juice instead of yuzu since I’ve no idea where to find that and I used 4g of matcha instead of 6g because I was afraid they would come out too bitter. They were perfect.
I really liked it but when I tested without glaze, I felt it lacked the flavor of yuzu a bit (I guess the bitterness of matcha I used was stronger than that of the team used) so I swapped milk for juice of yuzu when I made icing, and result was amazing.

Hey there, Yoshi, thanks for the feedback! Love the idea of using the yuzu juice for the icing, we will add that as a swap in the recipe. In case it helps in the future, we generally use a premium grade or ceremonial grade matcha which tends to be less bitter 😊

Hey Yua! We haven't tried it but we imagine you could. The original recipe for 6 donuts should make 6 muffins. We'd recommend keeping an eye on them and checking for doneness by using a toothpick inserted into the center. Let us know how it goes if you try 😃
