Grapefruit Rosemary Spritzer

Ingredients

Flavoured syrup

  • 2
    grapefruits
  • 2 cups (330 g)
    fresh pineapples, chopped
  • 6
    sprigs fresh rosemary
  • ½ cup (120 mL)
    water
  • ⅓ cup (75 g)
    granulated sugar

Soda

  • 3 cups (333 g)
    ice cubes
  • 1½ cups (360 mL)
    grapefruit juice
  • 3 cups (720 mL)
    carbonated water

Optional garnish

  • grapefruit wedges
  • sprig fresh rosemary

Directions

  1. Start with zesting the grapefruit. Reserve the zest for later.
  2. Add the juice from the same grapefruit to a saucepan, along with the remaining syrup ingredients. Cook uncovered at a gentle simmer for 10 - 15 minutes. Stir often.
  3. Then add the grapefruit zest to the saucepan. Use a wooden spoon or tamper to mash the pieces of pineapple to release their juices and flavours.
  4. Place a sieve over a bowl or pitcher and strain the mixture. Use the back of a spoon to press out as much liquid as possible. Let cool completely.
  5. Divide the ice between the glasses. To each cup, add 1 part syrup, 1 part grapefruit juice, 2 parts carbonated water. Garnish and enjoy!

Storage

  • The drink is best enjoyed immediately.
  • The simple syrup can be made ahead and stored in a glass jar in the fridge for up to 3 days.

Hey there, Pk, thank you for sharing your experience with it. How disappointing! Using a ripe grapefruit is helpful since they tend to be more tangy than unripe grapefruit which are more bitter. Mashing the pineapple chunks well also helps release more of the sweet juices to balance the flavour. We hope this helps for now 🙂

This was delicious. I batch made double the syrup, and enjoyed it every evening! Also substituted the grapefruit juice for orange juice, which was also great.

This is so good!!! The combination of grapefruit and rosemary is a dream.
I used frozen pineapple, because I couldn't get it fresh, and that worked out just as good.

I made this twice already and find it very nice and refreshing. I used orange instead of the grapefruit juice when putting the drink together in order to use up those oranges.

Delicious indeed! The pineapple and grapefruit combo is a dream, plus the rosemary... yummy! I feel like on a vacation every time I have this drink!

Délicieux ! Très frais. Un peu de soleil dans le verre sous la pluie. Les enfants ( 6 et 7 ans) ont adoré.
