This lemonade is incredibly refreshing and delicious. While I couldn't achieve the color layering effect, it was still enjoyable to watch it change from blue to purple. Next time, I might try pouring the lemonade first and then floating the pea flower tea on top. I used maple syrup instead of agave, and it worked wonderfully.

Mixed quite quickly, maybe using chilled water to add to the lemon juice was a mistake, will try normal room temperature next time.

Hey Paul, we don't imagine cold water would impact this recipe too much for the lemonade components. A slow pour over ice or the back of a spoon will help keep the lemonade from reacting to the butterfly tea too quickly. Hope that helps!

I love it so much but I'm not sure why the colour didn't change to half blue and half purple. Mime just changed to full purple

Hi Joanna, thanks for trying the recipe! The colour shift depends on how much lemonade you add and how concentrated the butterfly pea tea is. If it turned fully purple, it might be that the tea was quite strong or the lemonade ratio was lower. We achieved the blue/pink split by slowly pouring the lemonade over the ice. You can slow the pour by pouring the lemonade into the glass by pouring the lemonade over the back of a spoon. The size of your ice will also affect how fast the colour change happens - crushed ice will keep the lemonade and tea separate better than larger ice cubes. Hope that helps πŸ™‚

Does this work with the butterfly tea powder from your blue latte recipe?

Hey Beachpebble, we haven't tested it with the butterfly tea powder but imagine it should also work. It is a bit more grainy and has a bit of a chalky taste to it, so we'd recommend using less to start and adding more as needed. The colour of the powder is more concentrated anyway, so adding less should still result in a vibrant colour. The powder also clumps so just be sure to whisk well πŸ™‚ Let us know how it goes if you give it a try!
