Several types of delicious creamy horchata drinks can be found worldwide. Some use sesame seeds, melon seeds, or tiger nuts, but we take inspiration from the one we know in Latin American cuisine for this version. It's traditionally made with water, rice, sugar, cinnamon, almonds, and sometimes a splash of vanilla. It is naturally dairy free and perfect for hot summer days.

Maple syrup instead of sugar in this recipe was amazing ⭐️

I’d love to make this for some company I’m having, but she’s allergic to cane sugar. Is there a good substitute? Maple syrup? Honey?

Hey Ginger, we haven't tried it out but we imagine you could use syrup or an alternative sugar. Just be sure to adjust the amount to taste 🤗

Very tasty but it was a bit of a mess with the cheese cloth. Maybe my blender isn't powerful enough.

We're glad you enjoyed the taste, Stefanie! If the cheesecloth method was too messy, you could try using a very fine-mesh strainer or nut milk bag for a smoother process. If your blender seems to struggle, blending in smaller batches or soaking the rice a bit longer before blending might also help 🤗

Does it matter what type of white rice to use? Could brown rice work?

PUL small logo PUL Team - Dec. 3, 2023, 11:50 p.m.

Hey Stefanie, you can use short, medium, or long-grain white rice as long as it's uncooked. We used a long-grain rice. We haven't tried this recipe with brown rice but imagine it would impact the flavour of the horchata, so we'd recommend sticking to white if you can. If you experiment with brown rice let us know how it goes 🤗

I tried it with brown medium grain and soaked it for about 8 hours. Tasted good! 😃

Ooo thanks for the insight, Stefanie! We'll be sure to give it a try 😃

Can I still eat the remaining rice after ?

PUL small logo PUL Team - Aug. 19, 2023, 8:47 a.m.

Hey Olivia, yes you can if you'd like. One popular option is to use the leftover blended rice as a base for cooking dishes like rice pudding or as an ingredient in soups and stews :)

Stefanie S. - Dec. 4, 2023, 10:33 a.m.

I tasted the strained left over rice and it definitely isn't palatable by itself. Even tried to add some sugar, water and heat it up on the stove. This actually cooked it very quickly and it became like a rice cake! I loved the texture but it didn't have much flavour. Very interesting though
