Pour the brewed coffee into an ice cube tray and freeze. In a pitcher, combine the coconut milk and vanilla. Store in the fridge until ready to use.
In a large bowl, add the water, sugar and espresso powder and whip with a electric hand mixer for 4 - 5 minutes or until soft peaks form. Alternatively, you could also whip it by hand using a whisk which will take about 8 - 12 minutes.
To serve, add the coffee ice cubes to a glass. Fill half the cup with the vanilla milk, and top the other half with whipped coffee*. Stir and enjoy.
Notes
* The coffee whip can be re-whipped, if it's starting to deflate before it's served.
Storage
The coffee ice cubes can be stored in the freezer in the ice cube tray for up to a week, or remove from the tray and keep in an airtight container or bag in the freezer for up to 1 month.
The vanilla coconut milk can be stored in the container for up to 3 days.

It tasted absolutely delicious!!! I don't have a freezer so I didn't make ice cubes and just poured the cold coffee like that in the mug. I also couldn't whip the coffee mousse for a long time because my whisk isn't powerful enough so the mouse wasn't firm enough BUT despite that, it tasted great. The sweetness of the mousse balances the strong coffee flavour and it's just a perfect for me! ☕

If anyone is interested in making the whip a little less sweet (it’s delish as is, but I tend towards less sweet), I have just made a single serving with 2T hot water, 1T sugar, and 2tsp. Espresso powder. It worked perfect! In fact, it thickened up faster! For those of you that are like me and have a smaller sweet tooth - enjoy!

Hey Annie, we haven't tested it out so we can't say with absolute certainty. It looks like there are other recipes online that use maple syrup though, so it could work. It likely would take longer to whip and may fall easier than coffee whip made with granulated sugar. We'd love to hear how it goes if you experiment with it 🙂

For example, any unsweetened plant-based milk of choice can be used in this recipe whereas we recommend pea or soy milk in our cake recipes for their higher protein content 🙂

Hey Tee, thank you for taking the time to share - how disappointing to hear! Yes, just the water, sugar and espresso are needed for the whip. Warmer water may work better so we've updated the recipe accordingly to make it clear. Although we've also made it with room-temp water from the tap successfully. Aside from this, did you use the portions listed in the recipe? We find the whip can be delicate so measuring carefully is important in this one. Giving enough time to whip is also super helpful. Sometimes the extra 5 or 10 minutes can make all the difference! We hope this helps for now, Tee, and do let us know how it goes if you give it another try 🙂

Love the whip! I make a quarter of the recipe because I make it just for me and apparently my glasses are tiny. My hand mixer is temporarily out of commission so I tried whipping it with one of those battery powered milk frothing wands and it took only about a minute to be super smooth and fluffy. Definitely recommend using one of those if you have one.

This drink was so much fun to make (and drink!). I have a deep fear of not having enough coffee and always brew too much - I'll store leftovers in the fridge usually but made ice cubes this time. What I appreciate about this drink is there is no rush to drink it before it waters down. The perfect sip while reading a book and soaking up some sunshine. (I used Califia Farms Toasted Coconut & Almond Milk and did not add vanilla. It was on point.)

Husband & I watched the video together - he's a coffee enthusiast and I'm a fan. He made this recipe for me the following day and it is absolutely the best coffee drink I've ever had. So delicious and perfect in every way. I really loved sipping on it while watching the coffee cubes melt and swirl into the milk. We had it again the following day with oatmilk instead of coconut milk and it was just as good. This one's a keeper!

This is such a delicious and luxurious way to start the day! Especially in California heatwaves x.x I honestly thought I would mess up making the coffee whip, but it's actually really easy! I ended up using oat milk instead of coconut milk because that's what I have on hand. It was still very tasty but I'm excited to try it out with coconut milk next week.
