Very delicious!
Would recommend a wooden tool to flatten the mixture, because my metal tool cooled out the mix and now I have very thick bites. It was not possible to roll it very thin 😇

Delicious! When I toast things, I usually look for that slight browning. When I toasted the seeds, I never saw a color change, so I think over did it as the flavor of this recipe was very slightly burnt. It wasn’t inedible. I’ve been happily munching on it everyday, but I’d definitely remake this and be sure not to overtoast the seeds. I love when PUL directions have those asterisks and mention how long the step took for them (as the time will vary for everyone) as it gives an idea of how long.

In addition, the recipe says to allow it to cool for 15 minutes, so I didn’t think it would harden so quickly. Unfortunately, once I added the seeds and mixed, it was already getting hard, and it was even harder to spread out. This was just my experience, so maybe I had the heat too high as it certainly didn’t easily stream out of my pot like in the photos.

Hey Aileen, thanks so much for your feedback and for sharing your experience! You’re right—lightly toasted seeds are best since they keep 'toasting' in the hot sugar before it cools down. Sesame seeds can be sneaky like that, so a light color and fragrant aroma are usually the best signs they’re ready.

About the caramel hardening quickly— it can definitely firm up fast. The heat might’ve been a bit high, which can cause it to thicken quicker. Lowering the heat a little when adding the seeds should give you more time to mix and spread it out. So happy you still enjoyed it, and I’m sure it’ll be even better next time! 🤗
