These sweet and crisp snaps are a great on-the-go snack for busy days. They're great to meal-prep ahead of time, and enjoy throughout the week, and are especially delicious enjoyed with a tea or coffee.

Ingredients

Directions

  1. Line a baking tray and preheat the oven to 300°F (150°C)*.
  2. Add all of the ingredients to a medium bowl. Mix well, then transfer the mixture to the baking tray.
  3. Add another piece of parchment paper on top and roll it flat using a rolling pin. Use your fingers or the back of a spoon to tuck in the sides to create a rectangular shape.
  4. Remove the top parchment paper, and bake in the middle rack of the oven for 18 - 20 minutes, or until lightly golden. When removed from the oven, let it cool completely. It will continue to harden as it cools. When cooled, slice the sesame slab into bite-sized squares. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
  • * We used top and bottom heating (not fan-assisted/convection).

Storage

  • Store in an airtight container on the counter for up to 3 days.
  • Store in the fridge for up to 1 week.
  • Store in the freezer for up to 2 months.

Can’t wait to make these! Can I substitute the coconut sugar with brown sugar? Also can I add any other seeds, maybe chia seeds?

Hi Nish, thanks for the questions! We haven't tested it out so can't say with confidence. Someone else in the comments tried with regular sugar and didn't have great results. I suspect brown sugar to work better than regular sugar, but it's possible the final result will be a bit wetter as brown sugar tends to hold onto moisture more. I'd also be a little reluctant with adding chia seeds as they are small little guys, and can likely burn in the 18 or so minutes these need to bake in the oven. Flax seeds might work a bit better in this case. Do let us know how it goes if you experiment with this one 😊

Hello.
I have tried this receipt and the taste is supergood, but the texture was not ok. What could I do wrong? It was not keeping together the seeds, so it was not crunchy and was falling apart ... thanks for recommendation! Thanks for all these supergood ideas, you really inspire me!

Looks great! Did not have coconut sugar so substituted cane sugar. Was the coconut sugar a vital component? Unfortunately, the mixture did not stick together well.

Hey Mike, apologies this didn't work out for you. Indeed, I think using coconut sugar will yield a different result. Coconut sugar (or at least the one we used) has a very fine consistency, compared to granulated can sugar, which tends to have larger sugar crystals. I think this can affect the way it sticks together. I hope you're able to try again if you acquire some coconut sugar, and that it works out well for you! :)

You can make these with cane sugar but the method is a little different. Instead of putting it all in the oven you boil the sugar (with a little honey)on the hob like if you were making boiled sweets or peanut brittle. You also dont need the coconut if you use that method. You will get a crunchier snap but maybe a bit less healthy.
