These cookies are a breeze to put together and so tasty! I stored the baked cookies in an airtight container in the fridge and warmed them in our toaster oven at 250° for about 10 minutes before eating them. I might add a pinch of salt to the next batch I make.
I happen to have a batch of coconut flour that needs to be used, would using that instead of shredded coconut work here?
These were easy to make. Also very rich. I had to sub sunflower seed butter instead of almond. 🥥🥜🍌

Had to replace app. 1/4 of the shredded coconut with grounded almonds and all the maple syrup with vanilla paste because I ran out of those ingredients, but that did not impact the result. And eaten still slightly warm they are even better😊
So cool that it holds together so well despite barely containing any binding ingredients😯. Nice and easy to make, and this cookie is a good filling addition for a fika🍪🍎. The flavour is plain that is perfectly OK, but, therefore, no wow factor

Do the carbs include the fiber or has the fiber been subtracted?
The bananas I used were slightly smaller. I also added 2 cups of shredded coconut in total, extra maple syrup, and lots of different types of seeds for fibre. They also needed around 20min in the oven. Good way to use up some ripe bananas :)
As many others, I had issues with the stickiness of the dough but added some oat and almond flour to make it more firm. Still struggled to form balls, so the result is not super aesthetically pleasing but the taste is there !
I unfortunately did not find these to be very tasty. They aren’t sweet enough (probably depends on banana ripeness) and are overall very mushy and unpleasant in texture. Any ideas on how I can repurpose them?? I’m thinking to cut up into small bits and bake again to make them like a crunch granola-like topper.
We loved these cookies. The texture was perfect and the flavor is delicious . Next time I will add some cinnamon that sounds good.
Tasty, very easy to make. I did find it slightly oily for my liking - will try swapping half parts coconut for oat flour next time. Added cinnamon for a bit of extra flavour.
The mixture was too runny the first time i tried it as i used 115g banana excluding the peel. Fixed it on my second try.
Will try again and play around! My scale needs charged so I winged it and thought “7 inch bananas” are petty long so I’ll opt for more banana. Maybe this includes the stem and I chose too much banana? These turned out not the right texture for me and so I added coconut, but it wasn’t enough. So I added oats and then realized I wanted a smooth texture so blended again. And then I felt it could use a little something else so added a teeny bit of cornstarch. The texture ended up being good!! But I didn’t taste like a peanut butter cookie in the end. Overall, I’ll be pleased to eat these clean cookies! And maybe I’ll turn them into a cookie sandwich with peanut butter in between… or Nutella
Delicious! Very easy to make, I just mixed the ingredients with a spatula in a glass bowl, and it worked fine. We didn’t have any shredded coconut so I used a little oats. It did make it a lot more watery, but it baked perfect. I added some chocolate chips too. 😁😋

I had the same dough stickiness situation , but I had a little oat flour that I added. Half the batch got chocolate chip treatment. Loved both original and chocolate chip versions! Regarding moisture content, outside of just banana amounts, I wonder if PuL's food processor grinds up the coconut shreds better than mine. In the photos the coconut shreds seem more grounded while mine just seemed stirred in and still just shreds. Anyway this is another win and I will eat it again! Thanks
The best flavor!! I need to work on the dough though, i made it too runny and took a while to bake, but they arrived delicious
I made them with ground almonds since I don't like the taste of coconut, and they turned out really tasty. I'll make them again!
I may add 1/2 tbsp more of maple syrup next time though. I also had a fairly sticky dough (and no more almonds), so I dusted my hands and the fork with flour to shape them, and it worked like a charm. After baking I used a brush to dust the excess flour.

I had the same issue with the dough being very sticky and the texture wasn’t very chewy like on the pictures, but I still enjoyed the taste!
I tried making these yesterday, but the dough turned out very sticky, making it hard to roll balls. Maybe I added to much banana? So I added a little flower, which helped a bit. We are not a big fan of the cookies, but my son likes them! A healthy snack for him :-)
Very very tasty! I didn’t thought they have so nice flavour and texture when I saw the ingredients… but they are awesome!
I am wondering if they would work with oat flakes…
