I happen to have a batch of coconut flour that needs to be used, would using that instead of shredded coconut work here?

Hey Trudy, coconut flour instead of shredded coconut will change the texture and moisture of the cookies a fair bit, as coconut flour absorbs much more liquid. For best results, we'd recommend sticking to shredded coconut in this recipe.

In case you're interested, we've heard a positive review for using coconut flour in our "Orange High-Energy Oat Bars" in place of its almond flour 🙂

Sooo good - from the slightly chewy texture to the combination of flavours!!
Had to replace app. 1/4 of the shredded coconut with grounded almonds and all the maple syrup with vanilla paste because I ran out of those ingredients, but that did not impact the result. And eaten still slightly warm they are even better😊

So cool that it holds together so well despite barely containing any binding ingredients😯. Nice and easy to make, and this cookie is a good filling addition for a fika🍪🍎. The flavour is plain that is perfectly OK, but, therefore, no wow factor

The bananas I used were slightly smaller. I also added 2 cups of shredded coconut in total, extra maple syrup, and lots of different types of seeds for fibre. They also needed around 20min in the oven. Good way to use up some ripe bananas :)

As many others, I had issues with the stickiness of the dough but added some oat and almond flour to make it more firm. Still struggled to form balls, so the result is not super aesthetically pleasing but the taste is there !

I unfortunately did not find these to be very tasty. They aren’t sweet enough (probably depends on banana ripeness) and are overall very mushy and unpleasant in texture. Any ideas on how I can repurpose them?? I’m thinking to cut up into small bits and bake again to make them like a crunch granola-like topper.

Hey Yuliya, sorry to hear you didn't love this one. A granola-like topper is a lovely idea which could add texture to dishes. You could break them up and bake them a bit or you could also mix them with a bit of rolled oats and bake them to get more of a granola-vibe. Perhaps you could also consider using crumbled pieces in parfaits, smoothie bowls, or desserts such as ice cream 🙂

Thank you I will try that! I also forgot to mention that I substituted a 1:1 gluten free flour so that also could’ve affected my liking towards the cookies.

Hey Yuliya, there isn't any flour in the original recipe, so indeed I think using a flour, even if gf, largely contribute to the change in taste and sweetness you exprerienced. The recipe is naturally gluten-free, so no need to add flour, in case that helps :)

We loved these cookies. The texture was perfect and the flavor is delicious . Next time I will add some cinnamon that sounds good.

Tasty, very easy to make. I did find it slightly oily for my liking - will try swapping half parts coconut for oat flour next time. Added cinnamon for a bit of extra flavour.

The mixture was too runny the first time i tried it as i used 115g banana excluding the peel. Fixed it on my second try.

Hey Elaine, thanks for sharing your experience with this recipe. The runny texture is likely more a result of the nut butter being a different consistency, rather than the amount of banana used. Some brands of nut butters are more liquid/oily naturally, while others are more thick. If you're ever making this again, and it's looking too runny, simply adding a bit more shredded coconut should help. We've updated the directions to also help communicate this to others. Will try again and play around! My scale needs charged so I winged it and thought “7 inch bananas” are petty long so I’ll opt for more banana. Maybe this includes the stem and I chose too much banana? These turned out not the right texture for me and so I added coconut, but it wasn’t enough. So I added oats and then realized I wanted a smooth texture so blended again. And then I felt it could use a little something else so added a teeny bit of cornstarch. The texture ended up being good!! But I didn’t taste like a peanut butter cookie in the end. Overall, I’ll be pleased to eat these clean cookies! And maybe I’ll turn them into a cookie sandwich with peanut butter in between… or Nutella

Delicious! Very easy to make, I just mixed the ingredients with a spatula in a glass bowl, and it worked fine. We didn’t have any shredded coconut so I used a little oats. It did make it a lot more watery, but it baked perfect. I added some chocolate chips too. 😁😋

I had the same dough stickiness situation , but I had a little oat flour that I added. Half the batch got chocolate chip treatment. Loved both original and chocolate chip versions! Regarding moisture content, outside of just banana amounts, I wonder if PuL's food processor grinds up the coconut shreds better than mine. In the photos the coconut shreds seem more grounded while mine just seemed stirred in and still just shreds. Anyway this is another win and I will eat it again! Thanks

Our food processor is quite powerful so that could indeed contribute to a finer texture. If the coconut shreds aren't ground enough that will impact the texture of the cookies. I made them with ground almonds since I don't like the taste of coconut, and they turned out really tasty. I'll make them again!
I may add 1/2 tbsp more of maple syrup next time though. I also had a fairly sticky dough (and no more almonds), so I dusted my hands and the fork with flour to shape them, and it worked like a charm. After baking I used a brush to dust the excess flour.

I had the same issue with the dough being very sticky and the texture wasn’t very chewy like on the pictures, but I still enjoyed the taste!

I tried making these yesterday, but the dough turned out very sticky, making it hard to roll balls. Maybe I added to much banana? So I added a little flower, which helped a bit. We are not a big fan of the cookies, but my son likes them! A healthy snack for him :-)

Hey Emilia, so happy to hear! We haven't tested it out but we imagine you could for a nice chewy texture. Perhaps one idea is to start by replacing about one-third to one-half of the shredded coconut with oat flakes and adjust the nut butter and syrup as needed. Happy baking 🫶
