½ cup (38 g)unsweetened toasted shredded coconut

Directions
- To a large bowl, add the puffed rice, peanut butter, coconut, maple syrup, vanilla, and salt*. Mix. Add the chocolate chips, and mix again.
- Using a tablespoon measure, scoop a large spoonful of dough into your hands and roll it into a ball**. Repeat with remaining dough until finished.
- Optional step: roll the energy balls through extra toasted shredded coconut. Enjoy!
Notes
- * If your peanut butter is already salted, consider omitting this salt.
- ** The consistency of peanut butter can vary from brand to brand. If you find that the mixture is too wet, simply add more shredded coconut until the mixture is easy to work with.
Storage
- Store in an airtight container in the fridge for up to 5 days.
- Store in the freezer for up to 2 months.

These are AMAZING!! And so easy/ I used puffed quinoa and it was still warm from puffing which had a chocolate melting effect we leaned into! Brought them to a beach hang and kids and adults devoured 10/10 hardest part is cleaning the single bowl 👍
I was craving something chocolatey and fudgy and coconuty, and this worked like a charm: super fast and easy to make. Perfect for a little sweet something to have with evening tea.

Very tasty! I don't like the taste of coconut, so I swapped it for ground almond, and I used puffed quinoa. It was very good, however not crunchy anymore after I rolled the individual balls. I suspect that wouldn't happen with puffed rice since it's bigger. For next time!

These are sooo good ; i was weighing the rice crisp and i was using rice krispies and it came out to 33 g vs 14 🤔 perhaps it depend on the type we use .. so i went with the cup measurement for that one , just wanted to make sure about the weight in grams , thanks

made these with crunchy peanut butter and wow wow wow, so good! they’re the perfect little snack to get some extra protein in.
I added a bit of steel cut oat instead of extra coconut.
Such a tasty snack! My mix was a bit too sticky even after using more coconut and rice. I made them into bars like rice crispy treats rather than roll them so I didn’t have to add more rice or coconut.
The taste was pleasant, but the dough was way too sticky and even after letting it chill in the fridge the balls didn't get firmer. I think i should add less peanut butter next time, so the balls can be drier.

I was wanting to make a good filling snack today and this recipe was great. I didn't have rice puffs on hand so I substituted them with oatmeal. The first batch was so good I had to make a second batch with an added twist of instant coffee dusting on top. This recipe is such a good base that it has so many add on options to keep things interesting.

My boyfriend needed a snack to increase his protein intake so he tried these home-made bars with peanut butter and protein powder that you can find on YouTube. Honestly, they tasted plain, dry and just not good. I saw this as an opportunity to make him a vegan alternative!
I subbed the coconut in the batter for chickpea powder to increase the amount of protein. I also added hemp and toasted sesame seeds. I topped them off with coconut shreds like you did and they turned out AMAZING. We are currently at batch number 3 and we are both obsessed with our newly found snack. I've been vegan for about ten years. Over the past two years, I've gotten into ultra running, and a lot of the snacks and supplements aren't necessarily vegan. These little energy balls have been a lifesaver! I prep a bunch of them before my races and put them in my drop bag and tuck them away at aid stations to snack on during my 50k and 50-milers.
Any suggestions for puffed rice substitutes? Having a hard time finding puffed things that are not “cheese puffs” 😬
Also, it’s no exaggeration to say that PUL has changed my life. 😁 Can’t thank you enough.

These are an absolute favorite in our house. I prefer them crunchier so I add a bit more puffed rice. They are so easy to make and we take them with us everywhere.
Just made a batch for tomorrow to replace halloween candies and they are delicious! I made them a lot smaller and replaced the peanut butter with a gingerbread flavoured almond butter I found... Perfection! Thanks guys, you did it again :)
OMG they are great. I coated some with cocoa powder so they look like truffles and my peanut butter is crunchy. Basically they are awesome just need to keep my cool and not eat them in one sitting.
Made them today and they taste awesome! The proces of making them was a little bit messy. The mixture was way more sticky then in the video even though I added extra shredded coconut. Next time I will let the mixture set for a while in the fridge! But they are too delicious to not give it another try !! Thank you PUL team :)
The first recipe frlm PUL which doesn't go easy. It ends up in a mess. I have peanutbutter everywhere. I don't know whats my fault, but the taste is super delicious😂😅.
The dough stick to my fingers like superglue😂.
Now the balls are in the freezer and after a while i will roll it again. By the way, in the video you use toasted Coconut, in the written recipe its not toastet.

I was looking for some easy vegan snacks that would help me get through the busy days. This is perfect! The taste is so nice and my boyfriend loved them as well! Swapped the puffed rice for puffed buckwheat because that was the only puffed thing I could find in my local supermarket for some reason, but it worked also well!
So simple, even a simple brain man like me can make them 😁😁😁

These were really tasty and easy to make! It took me about 15 minutes, and I had all the ingredients already in my pantry. I’ll definitely be making these again in the future, maybe next time I’ll press the mixture into a baking dish and let it cool in the fridge so I can cut them into bars. We’ll see, but either way I definitely recommend giving this a try.
I'm an undergraduate student, so I'm always on the go. I live on easy-to-make meals and snacks. I made a small batch of these on exam week, and they were wonderful! I didn't have puffed rice or coconut flakes so I replaced them with pumpkin seeds and crushed walnuts. And I've gotta say, this recipe is so versatile. I will 100% make these again.
