One of my fav energy ball recipes!!! I might add the chocolate chips at the end so they end up whole in the final product! I just love the crunch of the chips :)

My standing blender was too weak for the job because the paste is very thick. I used the manual blender and it did well. But I was afraid that the balls would be too dry and added a bit of blended orange. And it ended up too soft :p Still managed to roll them and coat in chia seeds in my case fortunately. I will trust the thickness next time π What options would you recommend to thicken the paste if needed?

Hey Antonina, thanks for taking the time to share your experience with the recipe! We'd actually recommend using a food processor rather than blender if possible. Food processors are better suited for blending semi-solid ingredients, like in this recipe, compared to blenders which are usually designed for liquids. We just don't want you to break your blender! π
Stirring in some quick oats, more chopped nuts, and putting the mixture in the fridge to harden a bit would help to thicken the texture π
When it comes to the food processor, I just don't have one π but maybe it's time to invest if I want to have more of delicious energy balls π

Definitely get a food processor! If for no other reason than you're missing out on SO many delicious PUL recipes without it! Even with my food processor, I do sometimes have to just do tiny pulses until the ingredients are a bit more chopped before I leave it on to finish the job. I do a lot of 2-5 second pulses, scrape the sides down, repeat π but it works!
Weekend has started and I am definitely gonna try this today and keep a stock π.

Okay I prematurely judged these. I made these and the chocolate peanut butter stuffed date balls. While I do like the chocolate peanut butter ones better still, these are so good! I had tried the base before rolling it in coconut and the warmer temperature made the flavor of the dried fruit super strong which I donβt love. But after rolling in coconut and refrigerating them, they tasted so much better for whatever reason haha. I love both of the date ball recipes. Highly recommend either one. I made two double batches for my last few weeks of pregnancy and look forward to eating them every day!
