  • 1 cup (240 mL)
    peanut butter
  • ½ cup (89 g)
    Medjool dates, pits removed
  • ½ cup (120 mL)
    unsweetened soy milk
  • 2 Tbsp (14 g)
    ground flaxseeds
  • 1 cup (26 g)
    puffed rice
  • 1½ cups (46 g)
    bran flakes with red berries
  • ½ cup (80 g)
  • 1 cup (240 mL)
    unsweetened soy yogurt
  • 3 Tbsp (5 g)
    freeze-dried strawberries, roughly chopped (optional)
  • 1 tsp (2 g)
    lemon zest (optional)

Directions

  1. In a food processor, combine the peanut butter, dates, milk, and flaxseed until a soft dough forms.
  2. Transfer the mixture to a large bowl and add the puffed rice, cereal flakes, and cranberries. Gently mix until combined.
  3. Line an 8 x 8 inch (20 x 20 cm) baking dish with parchment paper. Transfer the mixture to the prepared dish and firmly press down on it using the back of a spoon or your hands*.
  4. Pour the yogurt over the base and sprinkle it with freeze-dried strawberries and lemon zest. Place the dish in the freezer for at least 3 hours, or until the yogurt is frozen**.
  5. Remove from the freezer and let it come to room temperature for about 5 minutes to soften slightly so that it cuts more easily. Cut into bars and transfer to an airtight container, using pieces of parchment to separate the pieces.
  6. Store in the freezer until ready to eat. Before enjoying, let your bar thaw slightly so that the yogurt softens.

  • Nutrition tip: aim to use plant-based milk that is fortified with calcium.
  • Ideally choose a cereal that is low in sugar, as we are already naturally sweetening our bars with dates and dried cranberries.

I am alergic to dates. Can I use something else?

Hi Liese, you could possibly use another dried fruit with extra syrup as needed. For example, we've heard a positive review for a mixture of prunes, dried cherries, and syrup from Ariane. If you prefer not to use dried fruit, we'd recommend experimenting with some syrup and nut butter. Let us know how it goes if you give it a try 🤗

Hey Preeti, the yogurt will be frozen so it's harder in texture but using a higher-fat yogurt may help it stay creamier with less ice. Using an air-tight container can help prevent the bars from getting ice needles in case one wasn't used as well. If you leave the bars out for a few minutes this will also let them thaw and soften 🤗

Hey Katrina, we typically find puffed rice in the cereal section of our local grocery store. It adds a lovely crunch to the breakfast bars but you could omit puffed rice if it's not accessible, and simply add more bran flakes 😊

This recipe is fantastic. I topped it with dried pomegranate and the lemon zest and used grape nuts flakes for my bran cereal and it is just so good. I don't know why this hits so hard, but it really does. It's so satisfying and a total burst of energy. I love the denseness of the base against the bright topping.

I used almond mous. Sure that I should use a whole jar for the recipe, so 240ml ? To me that seems quite a lot.
After I put the dates with the almond mous and the almond milk in the food processor was my measures quite creamy so not at all like you in the video. Maybe someone knows what I did wrong ?

Hi there, Christine, yes one cup of nut butter such as almond butter is what we found worked well in this recipe. A little more or less is totally okay though. I wonder if your nut butter may have been on the more creamy side, or perhaps the dates were on the small end. Did you also add flaxseeds to the mixture? These really help to absorb some of the liquid. If the flaxseeds were added, another possibility is the mixture might've been overmixed. It can be suuuper tempting but only mixing until a soft dough forms is all we need for the base. We hope this helps for now 😊

This was fantastic, I'm so happy with it! I literally just finished up eating it as an afternoon snack and I think it's the perfect thing to hold me through until dinner.

I don't own a food processor, so I gave it a go with a stick blender. To compensate, I soaked my dates in boiled water for somewhere between 1-2 hours beforehand, drained them and chopped them up and microwaved my peanut butter for about 30 seconds before blending them up with the milk and flaxseeds.

I also used cornflakes, a mixed berry soy yogurt and sprinkled some crushed frozen raspberries on top. Froze them overnight and I think about 7 minutes was a good amount of thawing time for me. The yogurt didn't become goopy but also wasn't icy, and the base still had a good crunch, wasn't soggy at all.

Nice and fresh addition to the breakfast assortment👏🏼. I used smooth almond butter, oat bran flakes and finely chopped raisins, which was delicious. The crunch in these bars is different and fun!
Surprisingly, the bars are not filling as expected, and I became hungry rather fast despite topping up the breakfast with fruit salad😯

You could opt to have a smoother base rather than crunchy, or alternatively gently fold in more flakes, puffed rice, or dried fruit to taste if this is the case. If the base is already fairly sweet, it would probably be best to avoid adding more dried fruit though. Do let us know if this helps or if we interpreted the question incorrectly 😊

Though I rarely check out the nutritional info for the recipes, I recently was reading an article about the recommended sugar intake for women. At 25 grams per day, this one would really put it over the top. Since there is no refined sugars does this not count?

It sounds like you may be referring to the World Health Organization recommendation: who.int/news/item/04-03-2015-… which indeed refers to "free" or added sugars. For example, syrup or sugar as an ingredient being added rather than the sugar naturally present in foods.

Hey Sadia,

I made these 2 days ago. The taste is great but they because soggy instead of crispy. While defrosting them a lot of moisture came out of the yoghurt and made everything wet. I used the unsweetened soy yoghurt from alpro. How do you get yours to stay crispy? I left mine in the freezer overnight by the way. Was this too long?

Hey Sadia, the breakfast bars turned out really good.. I think it can be better though and it has something to do with the dates. I soaked the Medjoul dates because I use a mixer/grinder(750 watts) and I think I soaked it too long coz the peanut butter & dates became a paste. Secondly, I notice that when I thaw the bars they become soggy .. is there something I should be doing differently?

I made these bars and they are delicious! But they are extremly sticky, I don't know what I have done wrong....I used puffed quinoa and I added a few more cornflakes but this didn't worked.. . I used the metric measurements, could this be the reason for this consistency?
However they taste good, so thank you for another great recipe!

The metric measurements shouldn't make too big of a difference for the provided ingredients as they're taken from the USDA for higher accuracy. We'll be sure to double-check them shortly though! I'm thinking it might be the kinds of dates you're using as some are more "sticky" or larger than others. Did you happen to use a different type of date? One tip could be to try to add dates to the base mixture until you notice it just sticks together well.

Another idea is to not let the bars thaw for too long after freezing them. This may help prevent the yogurt and base from melting and feeling more sticky if desired 😊 So glad the cereal bars were enjoyed regardless 😃

I don't have Medjool dates where I live unfortunately, so I'm not sure if they differ much. Your tip to add as many dates until the mixture sticks together is great and I will make them again this weekend!

Feel free to use whatever dates are the most accessible to you 😃 We prefer Medjool dates as they're generally a bit bigger and chewier than the more firm and smaller dates available to us, but either of the options you mentioned are fine. This recipe seems incredible!! it's for sure the one I'm going to try and make this weekend, since it's just too hot outside to turn on the oven.
But Sadia, I had a question: a couple of days (or maybe even more than a week) ago, you posted on IG stories a video where you told us you were trying some iced coffee recipes and I was wondering, are those coming soon or we still need to wait a couple of week/a month to see them? Because they looked so INCREDIBLY good!
