Ingredients
-
1 cup (240 mL)peanut butter
-
½ cup (120 mL)unsweetened soy milk†
-
2 Tbsp (14 g)ground flaxseeds
-
1 cup (26 g)puffed rice
-
1½ cups (46 g)bran flakes with red berries†
-
-
1 cup (240 mL)unsweetened soy yogurt†
-
3 Tbsp (5 g)freeze-dried strawberries, roughly chopped (optional)†
-
1 tsp (2 g)lemon zest (optional)
Directions
- In a food processor, combine the peanut butter, dates, milk, and flaxseed until a soft dough forms.
- Transfer the mixture to a large bowl and add the puffed rice, cereal flakes, and cranberries. Gently mix until combined.
- Line an 8 x 8 inch (20 x 20 cm) baking dish with parchment paper. Transfer the mixture to the prepared dish and firmly press down on it using the back of a spoon or your hands*.
- Pour the yogurt over the base and sprinkle it with freeze-dried strawberries and lemon zest. Place the dish in the freezer for at least 3 hours, or until the yogurt is frozen**.
- Remove from the freezer and let it come to room temperature for about 5 minutes to soften slightly so that it cuts more easily. Cut into bars and transfer to an airtight container, using pieces of parchment to separate the pieces.
- Store in the freezer until ready to eat. Before enjoying, let your bar thaw slightly so that the yogurt softens.
Notes
- †Nutrition tip: aim to use plant-based milk that is fortified with calcium.
- †Ideally choose a cereal that is low in sugar, as we are already naturally sweetening our bars with dates and dried cranberries.
- †Nutrition tip: aim to use plant-based yogurt that is fortified with calcium.
- †We picked the freeze-dried berries out of our cereal box.
- * The more tightly packed you can make it, the better the bars will hold together when ready to enjoy.
- ** The yogurt may turn a yellow colour in the freezer. That's normal and it'll return to its original colour if it sits in the fridge or at room temperature.
Storage
- These bars can be stored in the freezer in an airtight container for up to 1 month.

I am alergic to dates. Can I use something else?
Can I ask why it always seems to be Medjool dates that are used generally in plant based recipes (not just yours Sadia). Are they particularly healthy?
Is the yogurt supposed to be “icy” after freezing it? IDK for some reason I assumed it’ll be creamy to bite into 😅
I made this recipe today and I loove it!!
Totally recommend it. The batter has a special texture. Perfection 👌
Love all the recipes but I typically don’t have access to at least one item from the recipes. I don’t think I’ve ever even seen puffed rice. 🤔😅
Loved this pancake recipe, quick and perfect for breakfast! Also added a berry medley sauce to top it off (frozen berries, brown sugar and water on stove).
This recipe is fantastic. I topped it with dried pomegranate and the lemon zest and used grape nuts flakes for my bran cereal and it is just so good. I don't know why this hits so hard, but it really does. It's so satisfying and a total burst of energy. I love the denseness of the base against the bright topping.
I used almond mous. Sure that I should use a whole jar for the recipe, so 240ml ? To me that seems quite a lot.
After I put the dates with the almond mous and the almond milk in the food processor was my measures quite creamy so not at all like you in the video. Maybe someone knows what I did wrong ?
Delicious and so easy!
This was fantastic, I'm so happy with it! I literally just finished up eating it as an afternoon snack and I think it's the perfect thing to hold me through until dinner.
I don't own a food processor, so I gave it a go with a stick blender. To compensate, I soaked my dates in boiled water for somewhere between 1-2 hours beforehand, drained them and chopped them up and microwaved my peanut butter for about 30 seconds before blending them up with the milk and flaxseeds.
I also used cornflakes, a mixed berry soy yogurt and sprinkled some crushed frozen raspberries on top. Froze them overnight and I think about 7 minutes was a good amount of thawing time for me. The yogurt didn't become goopy but also wasn't icy, and the base still had a good crunch, wasn't soggy at all.
Thank you for such a simple and tasty recipe!
Nice and fresh addition to the breakfast assortment👏🏼. I used smooth almond butter, oat bran flakes and finely chopped raisins, which was delicious. The crunch in these bars is different and fun!
Surprisingly, the bars are not filling as expected, and I became hungry rather fast despite topping up the breakfast with fruit salad😯
I'm not a vegan .But I love your recipe s.Sometime I use dairy stuff in your recipe they came out pretty good. Can I use normal milk and yogurt in your recipe ??? Will they make huge difference in the final product ??
I processed the dates separately and then combined the rest of the ingredients by mistake :( and now the mixture is more creamy than a dough-like consistency. What can I do now to counteract this?
Omg these are AMAZING!!! i actually substituted rolled oats for the bran flakes. Came out awesome!
I really want to try these this weekend. Is three minutes enough to thaw the base of the bar before eating?
Love them, but I personally like the other frozen yoghurt bars with oat base a bit better... Still very yummy though!
I am totally, completely and utterly in love with these! I can't tell you how much I love them! The peanut butter and dates mix with the yoghurt is out of this world. I am speechless!
These bars are the highlight of my day and made it ten times better! I am so grateful for your work, guys!
These are delicious!
This was a delicious recipe! I cannot recommend it more! I used Almond butter , rice crispy cereal and vanilla almond yogurt as substitutes! It was super helpful having the weight next to the items. Really Bravo on the website! It is so easy to use! I don’t know how many times I have messed up a recipe trying to cut it in thirds. Thank you for the delicious breakfast!
Wowsers! I enjoyed the first PUL fro yo bar recipe but I thought these were next level! Loved the crunchy cereal, dried fruit, nut butter combo as the base and the fresh, fruity, creamy topping was perfection! 👌🏻 I used coconut soy yogurt and it worked so well. 🥥❤
Loved this recipe ! Simple and decadent … been following your channel for a while now … big fan , I look forward to your videos , they are so honest , informative and positive… May you keep growing …
Absolutely delicious and not too sweet!
These breakfast bars are honestly such a light go-to breakfast. In the mornings, I don’t crave anything heavy so these bars are perfect to keep me fueled. Love these Saadia!!!
Delicious 😋
I tried this recipe as a dessert for my mother on mother's day and it turned out pretty well. Thanks, Sadia!
I've had the previous version as my go to breakfast since you posted it. Thank you for sharing an updated one so I can mix and match, since I became vegan I'm thrilled about waking up because breakfast has become my favourite meal!
Though I rarely check out the nutritional info for the recipes, I recently was reading an article about the recommended sugar intake for women. At 25 grams per day, this one would really put it over the top. Since there is no refined sugars does this not count?
This is the first PUL recipe I have tried. They turned out beautiful and delicious. I made the recipe exactly as written but I can see where it would be fun and easy to play around with substitutions just for fun. So glad I tried them.
Hey Sadia,
I made these 2 days ago. The taste is great but they because soggy instead of crispy. While defrosting them a lot of moisture came out of the yoghurt and made everything wet. I used the unsweetened soy yoghurt from alpro. How do you get yours to stay crispy? I left mine in the freezer overnight by the way. Was this too long?
Love love love your site and channel by the way <3
I can't wait to try these! They look like the perfect, cool, summertime breakfast! Beautiful, too!
Looks incredibly beautiful and delicious. And photos are really good, bravo! Sadia, you and your team are so talented, wish you a lot of happiness and goodness. Thank you for your existence :)
These were a big hit with my kids! It is tricky to mix the cereal into the dough without totally crushing it, but it’s what makes these so delightfully crunchy! Hands down an improvement from the last breakfast bars.
Super delicious!! Also stores really well, kept it in the freezer for about a month.
Love these bars! I made them about a month ago and just pulled out the last one for a morning snack. Delicious!
This bars are absolutely amazing! the best go to snack for a summer day
These are delicious and sooo easy! I make them all summer long 😍😍😍
Love these yogurt bars! So tasty! Such a quick breakfast for summer.
This would be by far the prettiest crunch frozen yogurt bars I’ve ever seen!! Mine has just gone into the freezer .. fingers crossed 🤞. Thankyou for sharing your gift with the world Sadia! You are truly so talented 😇🤩
I love your food and info . What the different between kcal and Calories
Hello Sadia,
Thank you so much for this delicious and refreshing recipe! I‘ve made the bars this weekend, they where super easy to make and so filling. My boyfriend and I loved them. 😋🥰
Super simple to make and incredibly delicious - thanks PUL team!
Dear PUL-Team!
I made these bars and they are delicious! But they are extremly sticky, I don't know what I have done wrong....I used puffed quinoa and I added a few more cornflakes but this didn't worked.. . I used the metric measurements, could this be the reason for this consistency?
However they taste good, so thank you for another great recipe!
Lots of love from Austria!
Hi Sadia! Dates aren’t very common in my country so I’m not that familiar with it. Am I allowed to use dried medjool dates in this recipe or should it be fresh? Also, if I can’t find medjool dates can I use the dried deglet noor variety? Thank you so much!
Made these and they turned out yummy. Will definitely be making them again as a healthy snack for the evenings.
Made this tonight and it was amazing! I did not have dates or puffed rice on hand but used some prunes, date syrup, and dried cherries (no sugar added) and extra corn flakes. Lemon zest brought an amazing taste. Worked out so good!
Hello Sadia from Athens, Greece.
Your recipes are amazing, but what is even more amazing is the way you present them! You make a difference, I'm sure you've known it by now :)
So, my question is, how many grams is each serving?
Thank you.
This recipe looks absolutely delicious! 😍 Do you think there is a way to substitute the dates? As i can't have dried fruit and also have to be careful with fruit in general, this is a problem i often have to tackle but i find it hard to find a good solution for this. Any ideas?
Also, thank you so much for your great content, i really enjoy all of your posts!
Hi, thank you for this new batch of recipes, this time I am intrigued to try all three from the latest video! :) I am printing them out and noticed that you can scale your ingredients, but not the size of your baking dish (I was thinking of printing 20-bars-recipe for the whole big family, so it is relevant).
This recipe seems incredible!! it's for sure the one I'm going to try and make this weekend, since it's just too hot outside to turn on the oven.
But Sadia, I had a question: a couple of days (or maybe even more than a week) ago, you posted on IG stories a video where you told us you were trying some iced coffee recipes and I was wondering, are those coming soon or we still need to wait a couple of week/a month to see them? Because they looked so INCREDIBLY good!
Con todo respeto: No soy una persona vegana, pero amo cocinar. Me encantan tus recetas 😋 y por la forma de cocinar se que tú también amas 😍 cocinar.
