In a small bowl, combine the yogurt, cashew butter, maple syrup, lemon zest, and vanilla extract.
Crumble half the digestive biscuit into the bottom of a cup, top with half of the yogurt mixture, crumble the other half of the biscuit over that, then finish with the remaining yogurt.
Add the fruit and you're good to go!
Storage
The flavoured yogurt can be stored in an airtight container in the fridge for up to 3 days.
The prepared parfait is best enjoyed immediately.

Couldn’t find playing Greek soy yoghurt. Used vanilla Greek soy yoghurt and left out the maple syrup and vanilla from the recipe.
It was tasty like this but I know it would’ve been even better had I followed the recipe exactly. 😍

Tried this with Siggi’s plant based coconut yogurt and a plant based chocolate chip cookie. Turned out so good! I think I put too much lemon zest but it tasted like key lime pie! 😆I’m not much of a yogurt person but this is certainly something I will keep making!

I’ve made this 3 times already it is so delicious, and a big hit in my household. One time I had to substitute almond butter due to a grocery order error but it was still great! Has anyone tried this frozen? I feel like it would make a good popsicle. Thanks for all your recipes, we have a large number in our regular rotation :-)

We haven't tested out freezing this one but that's a lovely idea 😍 It will probably help to add some liquid, such as unsweetened plant-milk, to help thin out the yogurt mixture so it fits into popsicle moulds better. Do let us know how it goes if you test it out!

Me again;)) HAD to leave another comment- as this is literally my breakfast ( with one of Your granolas!) line 4 times a week. I ALWAYS add some fresh ( or from the bottle) lemon juice though:) It’s so deliscuous, versatile!! So maybe some inspirations for people reading this- for my nut-allergic friend I replaced cashews with orange- was delicious. Sometimes I’d add banan if I’m hungry. Or half courgette ;) or Kiwi! I alternate nuts to have different vitamins and almost always add some chia. I sometimes use honey or different organic cookies; it’s a gem this one, I wouldn’t have thought of mixing those stuff if it weren’t for you!! So I love you continuously! Big hugs from Paris !

Wow, what a fluffy treat! I didn’t expect it to be so light, as the creamy cashew butter is rather heavy. I used Oatly’s Turkish yoghurt with 10% fat, which turned out to be a good option. It has a better consistency than a liquid coconut yogurt and it doesn’t have the bitter/strange background taste as soy-based products. I loved this mousse on its own, but it’s amazing when combined with something crunchy. So far, I’ve eaten it with PUL Healthiest ever granola and blackcurrant for afternoon fika. It’s wonderful☺️🥲. I can imagine that this fresh and mild mousse would fit well as a topping for sponge or carrot cakes. Maybe not for chocolate desserts, it’d be too much…

We usually use the Alpro brand available at our local grocery store, and Albert Heijn (a grocery store here in the Netherlands) also carry their own house brand of plant-based yogurts we sometimes use as well 🤓 If you can't get your hand on Greek-style yogurt, any regular plant-based yogurt you enjoy should work well for this recipe 😊 Enjoy!

I made this in mason jars so our family could take it as a picnic on our way to our vacation spot. Everyone, from our 2 year old to my omni mom, loved them! I used granola instead of the biscuits and added some chia seeds for a nutrition boost-- delicious! I think this is my new favorite breakfast and dessert!

I've never liked yogourt but am on a 'no chew' diet for 2 weeks following major dental surgery. I decided to give yogourt one more try and made just the yogourt part using peanut butter. LOVED IT! Lots of protein and it simply slid on down.
