Directions
- In a small bowl, combine the yogurt, cashew butter, maple syrup, lemon zest, and vanilla extract.
- Crumble half the digestive biscuit into the bottom of a cup, top with half of the yogurt mixture, crumble the other half of the biscuit over that, then finish with the remaining yogurt.
- Add the fruit and you're good to go!
Storage
- The flavoured yogurt can be stored in an airtight container in the fridge for up to 3 days.
- The prepared parfait is best enjoyed immediately.

The taste and the texture combo is just heavenly, will be making again!
Swirled some of the Vegan Lemon Curd into the yogurt (I'm a lemon fiend) and added a layer of the Candied Coconut & Cinnamon Pecans to the top under the strawberries 😍😍😍.
This parfait was so easy and quick to make, and I really liked the taste. Had it as an evening snack. 😊
Couldn’t find playing Greek soy yoghurt.
Used vanilla Greek soy yoghurt and left out the maple syrup and vanilla from the recipe.
It was tasty like this but I know it would’ve been even better had I followed the recipe exactly. 😍

Tried this with Siggi’s plant based coconut yogurt and a plant based chocolate chip cookie. Turned out so good! I think I put too much lemon zest but it tasted like key lime pie! 😆I’m not much of a yogurt person but this is certainly something I will keep making!

I’ve made this 3 times already it is so delicious, and a big hit in my household. One time I had to substitute almond butter due to a grocery order error but it was still great! Has anyone tried this frozen? I feel like it would make a good popsicle.

Wow, what a fluffy treat! I didn’t expect it to be so light, as the creamy cashew butter is rather heavy. I used Oatly’s Turkish yoghurt with 10% fat, which turned out to be a good option. It has a better consistency than a liquid coconut yogurt and it doesn’t have the bitter/strange background taste as soy-based products.
I loved this mousse on its own, but it’s amazing when combined with something crunchy. So far, I’ve eaten it with PUL Healthiest ever granola and blackcurrant for afternoon fika. It’s wonderful☺️🥲. I can imagine that this fresh and mild mousse would fit well as a topping for sponge or carrot cakes. Maybe not for chocolate desserts, it’d be too much…

my 2 babies loved it ! I cut the vanilla extract and the maple sugar (none for them) but the whole fruits and yaourt with a nut butter is usually a lovely treat for them :) thanks ! (3 years old and 11 months )

I made this in mason jars so our family could take it as a picnic on our way to our vacation spot. Everyone, from our 2 year old to my omni mom, loved them! I used granola instead of the biscuits and added some chia seeds for a nutrition boost-- delicious! I think this is my new favorite breakfast and dessert!

I've never liked yogourt but am on a 'no chew' diet for 2 weeks following major dental surgery. I decided to give yogourt one more try and made just the yogourt part using peanut butter. LOVED IT! Lots of protein and it simply slid on down.

This has to be, no doubt, the absolute best yogurt recipe I have ever tried. Never trying any other flavour again. THIS is perfection. I know it's such a simple and small thing but man did you create a harmonious combination. 10/10 recommend.
I enjoyed this as a snack with my mom. I didn't have the digestive biscuits. I used some granola instead, and it still turned out amazingly flavorful 😋. The orange/lemon zest adds a surprising kick of tartness to the yogurt (in a good way). Highly recommend!
