Frequently asked questions

What is Dutch-processed cocoa powder?

Dutch-processed cocoa powder is treated with an alkalizing agent to reduce its natural acidity, giving it a smoother, milder flavour than regular cocoa powder, which is more acidic and has a sharper taste. You can use regular cocoa powder in this chia pudding recipe, but we find that Dutch-process cocoa works better.

How can I change the thickness of chia seed pudding?

If you prefer thicker chia seed pudding, add more chia seeds or let it set a bit longer. For a thinner pudding, mix in more plant-based milk until it gets to the desired consistency.

Can I make chia pudding without syrup?

Syrup adds a delicious sweetness to the chocolate chia seed pudding recipe. You can omit it for a less sweet breakfast, or swap it for another syrup, fruit like mashed banana or dried fruit, or your preferred sweetener.

What if I don't like the texture of chia seeds?

You can blend the chia seed pudding to make it more creamy and smooth. This also helps increase the absorption of the omega-3 fats, which are found inside the chia seeds!

This is almost like a dessert for breakfast, so what's not to like! Super easy and tastes really indulgent. I like that everything can be kept in the pantry and made the night before. I'm making a couple at a time to milk the least amount of effort 😜

Kaitlyn Youmans - Sept. 23, 2024, 5:07 a.m.

Could I make this without dates? Do you have any tips thank you!

Aileen - Aug. 30, 2024, 8 a.m.

Yum!! I was curious about the chopped dates as I only use them in baking, so I don’t typically have them raw. By the morning, I was happily having my chocolately breakfast, and I had this very sweet bite. At first, I thought there was a pocket of maple syrup I hadn’t properly mixed, so I thought that was the last sweet bite. I then realized the dates had softened so much, there was nothing to bite into. Instead, there were these pillowy pockets of sweet treats here and there. I loved this one!

Woop woop! Thanks for sharing your experience with the chocolate chia seed pudding recipe, Aileen 🙌

Ira - Aug. 28, 2024, 1:40 p.m.

It was a great second breakfast!
I did it without maple syrop because I did not have any at home. Even like this it had a perfect amonut of sweetness.

It turned out quite liquid what I did not expect, maybe next time I will add less milk/more chia seeds or proposed extra toppings which can help make it thicker.
Definitely, the recipe will be used again!!!

A staple in the breakfast rotation! I added honey and made the “Healthiest Ever Granola” recipe for the granola!!! Would highly recommended this nourishing breakfast- especially if you have a sweet tooth like me!!!!

Loving this breakfast!!

Dasha - Feb. 15, 2024, 11:18 p.m.

It is such an estatic way to eat chia pudding - not just milk, seeds and sweetener, but a combination of textures and flavours, which makes it both healthy and simple in the making dessert😋

PUL small logo PUL Team - Feb. 15, 2024, 11:40 p.m.

We're so happy that you're enjoying the chocolate chia pudding, Dasha! 😊

Audrey - Dec. 7, 2023, 6:26 p.m.

Love love love! The berries are a must for the acid/tartness. I added hemp seeds for some extra protein and nuttiness. Will definitely make again.

PUL small logo PUL Team - Dec. 8, 2023, 7:48 a.m.

Hemp seeds are a lovely idea to add, Audrey, thank you! So happy the chia pudding was enjoyed 😊

Amazing breakfast, added coconut flakes and it tasted truly like a dessert!

Rob - Nov. 6, 2023, 10:20 p.m.

This is such a great breakfast! I chuck everything in a glass as I'm cooking in the evening and then it's ready to go the next day. It's super tasty and feels a bit like a dessert for breakfast without being overly sweet. I like that everything can be kept in my cupboard too!

10/10 perfection

I make this once a week and usually bring next day to work to have it for breakfast. Such a great food to start the day, or continue. Thank you 🩷

Alexandra H. - July 12, 2023, 2:59 a.m.

Really tasty and filling chia pudding! A great option for breakfast.

Andrea Bryant - July 1, 2023, 3:08 a.m.

Question-is the cocoa powder unsweetened? Also can I use oat milk ?

PUL small logo PUL Team - July 3, 2023, 5:31 p.m.

Hey Andrea, we use unsweetened Dutch-processed cocoa powder, but it's naturally sweeter in flavour and dissolves more easily in liquid than general cocoa powder, which is more bitter. Feel free to use either. You can use oat milk as well 🤗

Laura Geiger - June 29, 2023, 7:52 p.m.

This was so good! 10/10 ⭐️

I had it for breakfast this morning. It indeed felt like I was having dessert 🍨 it was absolutely delicious and the freshness of the raspberries beautifully mellowed out the sweetness of the dates and the banana.

Jennifer Walker - Jan. 26, 2023, 8:41 a.m.

This is so delicious! It felt like eating a chocolate mousse but a healthier version. I didn’t have any granola when I tried it but you bet I’m making some so I can add that extra crunch to it next time.

Hi Msrobin! Thank you for the kind words and support 💚

Babs - Feb. 6, 2022, 3:12 p.m.

So good!

I have very early starts on days I have students to teach. I tend to survive in coffee and water until lunch on these days - not the best I know. I decided to try making an overnight breakfast recipe to help entice myself to actually eat. It was very good, and went great with my coffee! So great to have it already made so I could just open and go. 👍👍

PUL small logo PUL Team - Feb. 6, 2022, 9:37 p.m.

Woohoo! Overnight recipes are also one of our favourites for on the mornings. Thank you, Babs 😃

Sarah - Nov. 5, 2021, 1:17 p.m.

Everything tasted great!!!
But the chia seeds were a little hard to chew

PUL small logo PUL Team - Nov. 5, 2021, 7:03 p.m.

So happy it was enjoyed, Sarah! Whole chia seeds indeed have a bit of a harder outer coating. Using ground seeds may be one idea to experiment with if desired ☺️

Kaye - Jan. 31, 2023, 5:22 p.m.

Hey Sarah, this is an old comment and you may never see this, but here's a pro-tip if you dislike the texture of chia seeds - throw the whole mix in the blender in the morning and blend it up. You end up with all the nutrition of chia pudding with a silky smooth texture. I started doing this when babysitting my niece since she was picky and I didn't want to just give her junky instant pudding all the time and it worked out beautifully. She thought she was getting a special dessert and I was happy she was eating something that wouldn't just cause a sugar crash :)

Christa - Oct. 5, 2021, 1:14 a.m.

This was my first time trying chia pudding and it was so simple to make and I really enjoyed the consistency / texture. It was a great healthy snack. I would definitely give it at least five hours to chill and do it’s thing before eating. I tried a spoonful at two hours and it was more of a liquid drink than a pudding at that point. The one thing I didn’t love about this recipe was the taste. I was expecting a chocolate taste, but it just tastes like cocoa powder. I hadn’t realized there was such a significant difference until I researched it while eating my pudding. I’ll try this again in the future with my own twist to give it more of a chocolatey experience.

PUL small logo PUL Team - Oct. 6, 2021, 3:34 a.m.

Thank you for taking the time to share the feedback, Christa, it's so appreciated to help us improve and grow! We're sorry to hear the pudding didn't turn out as planned.

Indeed chocolate and cocoa powder tend to taste a bit different from each other. Topping the chia pudding with some chocolate shavings is one idea if desired. You're welcome to experiment though, and do let us know if you come up with any fun adjustments 😃 To help the chia pudding solidify in the fridge, we'd recommend giving it a really good stir after it sits for 5-10 minutes. Adding more chia seeds or less liquid initially can also help 😊

Shaneen - Oct. 3, 2021, 12:40 a.m.

Most chia pudding recipes online call for 3 tbsp of chia seeds to 1/2 cup milk ratio but your version with 1 cup milk is just so much better. It gives the pudding such a smooth and unclumped (is that a word?) texture. Love the addition of dates as a sweetener and the fun toppings. You're a true artist!

PUL small logo PUL Team - Oct. 3, 2021, 7:22 p.m.

So happy the chia pudding was enjoyed, Shaneen! Unclumped seems to be a word... maybe? 😛

Rachel - Sept. 16, 2021, 1:23 a.m.

The my plate tool is very cool! I had not seen that before on here.
I am making 2 servings as I type to eat for the rest of the week with my raspberries! Not sure what my granola sub will be (because I don't want to make granola today) but will def add coconut flakes and bittersweet chocolate chips! Looking forward to it!

PUL small logo PUL Team - Sept. 16, 2021, 2:25 a.m.

So happy you're enjoying the new website, Rachel! You could omit the granola, or replace it with extra fruit, nuts, seeds or rolled oats. We hope you love the breakfast pudding 😃

Ryan - Sept. 7, 2021, 7:51 a.m.

Amazing. I used to get my recipes from so many different places but over time i realized that nobody makes better food than PUL. I only get my recipes from here now. Honestly you should consider some sort of subscription service or something. I suspect many people would pay monthly to get access to your newest recipes. Love the channel and love the site & thanks for feeding me every day! P.S. this goes well with the new coconut milk coffee recipe

I just came to add my comment after having made this for breakfast, and all I have to say is: wow! I love overnight recipes in general and this one was no different. Plus, it was just the right amount of sweetness to start the day! I'm definitely adding this to my breakfast rotation, thank you!

PUL small logo PUL Team - Sept. 2, 2021, 3:34 a.m.

So happy to hear, Juliana! We appreciate it so much 🤗

jenny - Aug. 19, 2021, 6:13 p.m.

Is there a way to make it without maple syrup? Just looking for a healthy alternative lol

PUL small logo PUL Team - Aug. 19, 2021, 6:51 p.m.

Hey Jenny, the maple syrup helps give the pudding a delicious sweetness. Feel free to omit it or use another syrup, fruit (mashed banana or more dried fruit may work well), or sweetener of choice if desired 😊
