Nanaimo Bars

Nanaimo bars are named after the city of Nanaimo, located on Vancouver Island, in my home province of British Columbia. This classic Canadian treat is a layered bar, filled with rich, sweet custard icing, and topped with a layer of silky chocolate. They're delicious, eh!

Not sure what I did wrong, but I had to use way more coconut oil for the bottom layer and still it was a little bit falling apart.
Plus it was way too much of the bottom mixture, so I divided it into two forms. One I made with peanut butter instead of the sugary cream and it turned out like snickers from your other recipe..:)

Hiii DenisaS! Hmm it sounds like the base mixture may have been a bit on the drier side. This can happen if the dates aren’t super soft or if the mixture wasn’t blended quite enough. The dates are really what help bind everything together, so if they’re a bit firm, the base may end up crumbly and need more oil. If you try the recipe again, you could try soaking the dates in warm water for 10 minutes first, or blending the mixture a little longer until it really sticks together when pressed between your fingers.

Also, pressing the base veryyy firmly into the pan makes a big difference in helping it hold once chilled! Love that you turned the extra into a peanut butter version still, and hope this helps for now 🤗✨

Absolutely delicious!!! No words. I wasn't able to find this custard powder so I used cornstarch as I saw in the comments below.

I loved it - I made a 2 serving size recipe . Perfect amount for us as a treat . I had a small square dish for it and I used parchement paper to shape the size I wanted .

Hey, Kerstin, custard powder is a mixture that helps thicken the custard icing layer. It's often in the baking aisle or organic section of larger grocery stores 🙂 We haven't tested it out so can't say with certainty, but we've heard that cornstarch with a bit of vanilla or vegan vanilla pudding mix can work similarly. We hope you enjoy the Nanaimo Bars if you give them a try!
