I love a good energy ball. While I have not tried these yet I would recommend using a dark tart cherry variety, possibly a frozen cherry that has been blotted dry, or maybe dried cherries w/o added sugar. My reasoning is I live in America and during my agriculture degree courses I learned that the making of maraschino cherries is harsh at best. Vats of cherries sitting in lye, then in acid, just to bleach and toughen the flesh. Then soaked in dye and sugar water to give them their red color and sweetness back. Hopefully the process in other regions of the world is different than ours.

I have some regular cherries i need to use up. Do you think I could use those? Maybe add a little sugar or syrup to sweeten it up? I can add a little almond extract for the taste?

Hey Jacqui! I imagine regular cherries can work. Adding a little sugar or syrup is a lovely idea. You could also try patting them dry since they have more moisture than maraschino cherries. Almond extract sounds like a delicious touch. Let us know how they turn out if you experiment with the recipe 🤗✨

These were so yummy! I think my favorite coating was cocoa powder to add extra chocolate flavor. This recipe came right on time since I had a jar of maraschino cherries I needed to use up. Bliss ball recipes are the best because of how versatile they are and are a convenient snack option in my opinion!
