If you love peanut butter and chocolate, then you'll love these delicious balls. They don't need any baking, call for only 6 ingredients, and are a real treat!

Ingredients

Optional toppings

  • unsweetened toasted coconut flakes
  • roasted unsalted peanuts

Directions

  1. To a food processor*, add the peanut butter, dates, vanilla, and salt. Blend until smooth. Then remove the blade from the food processor and use a spoon to mix in the shredded coconut.
  2. Scoop up a tablespoon of the mixture and roll it into a ball**. Transfer the rolled balls to a plate and place them in the fridge or freezer.
  3. Meanwhile, melt the chocolate in a microwave or on a stovetop, using a double boiler. Let the chocolate cool off a little bit. Then line a baking tray or plate with parchment paper.
  4. Take the peanut butter balls out of the fridge and use two forks to dip the balls into the chocolate to coat them completely. Let the excess chocolate drip off and transfer to the parchment paper.
  5. If desired, sprinkle with a topping before the chocolate has hardened. Enjoy!

Notes

  • We use large Medjool dates in this recipe, if your dates are on the smaller side, try adding 1 - 2 more.
  • * If you don't own a food processor, you can also mash the dates using a fork and then mix them with the other ingredients. If the dates are not soft, soak in warm water for 10 minutes first.
  • ** If the mixture is too sticky and doesn't form into balls easily, add a bit more shredded coconut and try again.

Storage

  • Store in an airtight container in the fridge for up to 1 week.
  • Store in the freezer for up to 2 months.

YUM!! As a newly diagnosed diabetic, I'm missing my cookies and chocolate fix. This fits the bill! I decided to blend in the chocolate chips in the food processor and it worked great if you don't have time to melt the chocolate. Can't wait to try other energy ball combos!

I tried the recipie again :) I am just now realising how fast we ate them cause the second batch is almost gone now too.... 🥲

Forming small balls still didn't quite work for me. But maybe I just lack the patience for it. I've now found another solution; I pressed the peanut-coco mixture into a silicone ice cube tray, leave it in the freezer overnight, and coat them with chocolate the next day. Next time, I will also try mixing some coconut oil into the melted chocolate, as the chocolate remained a bit too thick and a lot of it stuck to every single peanut-squares not leaving enought for all of them. I'll come back to write how it went, in case anyone has the same struggle :)

Mega delicious 🤤 The choco melting/coating it didn’t work for me as expected. Most likely because of the chocolate I’ve used. It’s was not a dark one. But I’ve saved the situation by coating with cocos shred 👍🥥

I made these for my granddaughter who participates in both soccer and long distance running. She is, understandably, "crashing" without a nutritious snack before she begins her athletic endeavors. She needed something small, that would not leave her feeling full. She also needed some carbs, good fats and some protein and maybe some iron. Of course the balls should be very tasty. These energy balls have worked out well. They do it all! The only thing I would change is to make them a bit easier to keep in a school locker for the day. They get sticky when not refrigerated. Maybe the addition of some oats? Any ideas? Actually, any guidance for female teenage, vegan athletes would be helpful. Thanks.

We suspect extra dates may have been the culprit if the mixture was too sticky to form balls. Sometimes wet hands can also help do the trick aside from extra coconut. I made these this morning and they’re so good!! I feel like I just made fancy truffles :D I did have a bit of trouble with the consistency of the peanut butter filling in the beginning. The mixture was too wet to make into balls so I added a lot of extra shredded coconut, but it still wasn’t coming together. I determined that the problem was probably the kind of peanut butter I was using, which was smooth kraft peanut butter and is probably a very different consistency than the natural peanut butter Sadia was likely using. To soak up some of the moisture I added 1/2 cup almond flour and 1/4 cup coconut flour, and finally got a good consistency. After that it was smooth sailing, and they taste delicious! Next time I think I’ll use all coconut flour instead of almond. Thanks for the great recipe Sadia! :)

Making these yet again for some packed lunch prep/study snacks. I now have natural peanut butter on hand so the recipe works for me as written. I like to sub out the shredded coconut for almond flour for a little extra protein & less saturated fat. I often make a half batch and I use 2 medjool dates instead of 1.5. I've made these with almond butter instead of peanut butter and it's also delicious that way. I'm thinking about trying these with hazelnut butter sometime since I'm a sucker for the chocolate hazelnut combo. Thanks so much for this recipe! So simple but tasty & wholesome :)

A trick that I tried was, put an entire toasted almond in the centre of the ball when rolling it... it's like a special surprise!
