These cookies are really cute and perfect bite size. The cookies held together very well after 20 min in the oven at my first try, and I used apricot marmalade in lieu of berry jam. It turned out delicious 😋 The texture and taste of the baked cookie base resemble Norsk iskaka (Norwegian ice cream cake), which is such a great dessert (maybe my suggestion for PUL to veganise🤩)

Always 😊 By the way, these cookies freeze incredibly well! Maybe this can be added in the direction/storage section if you agree ☺️ They are almost ready to be eaten immediately after being taken out from the freezer

Literally so good that I ended up eating so much of the raw batter that instead of 22 cookies I only had 12 to bake! 😆🤍
