My two go-to breakfast favourites in one recipe: oatmeal and pancakes. These gluten-free oatmeal pancakes are quick to whip up and freeze super well, making them perfect for meal prepping and enjoying on the weekend. These easy pancakes with oats are also well-loved throughout the week for a wholesome and satisfying start to the day!

Oat pancakes

Toppings

  • ½ cup (120 mL)
    unsweetened coconut yogurt
  • ¼ cup (44 g)
    pomegranate seeds
  • 2 Tbsp (15 g)
    roasted unsalted pistachios, chopped

Directions

  1. In a food processor, blend the oatmeal into a flour. Alternatively, use store-bought oatmeal flour.
  2. Combine all the pancake ingredients in a large bowl.
  3. Preheat a large pan on medium-high heat with oil. When hot, spoon about ¼ cup of batter onto the pan for each pancake. Cook for about 2 minutes.
  4. When the bottom becomes golden, flip and cook for another 2 minutes, or until lightly golden.
  5. For a more balanced breakfast, enjoy these pancakes with some creamy nut butter drizzled overtop, fresh fruit, and creamy plant-based yogurt.

Notes

  • Nutrition tip: aim to use plant-based milk that is fortified with calcium.
  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.

Storage

  • Keep in an airtight container in the fridge for up to 2 days.
  • Frozen, these can last up to two months. Freeze with pieces of parchment separating the pancakes to prevent them from sticking together.

Had to substitute peanut butter for applesauce. I didn’t have enough yogurt either. So, since peanut butter was all I had, we experimented :(. Taste was ok but it was a very dense pancake. We’ll make them again and use applesauce next time.

This batter comes out really thick and slimy. I recommend to use about 150 to 200ml plant based milk, instead of 120ml. That was a little easier to spread in the pan.

But as a dish: really good! A filling and satisfying breakfast 🥰

I don't usually have sweet breakfasts but these are now weekly in the menu, topped with yogurt or homemade nutella. Also, I realised I need to introduce more omega-3s so I tried incorporating some ground flax into the batter and it worked great.

Hi! Loved the taste of these! But, I’ve got a question. Whenever I make any pancake recipe, my pancakes always end up somewhat undercooked, but crispy though. Any ideas as to why? The heat is generally set to 6/9 and I use a lid on the pan. They already take quite long to cook so I don’t feel tempted to turn down the heat..

Hey there, Tatum, glad you enjoyed the taste of the pancakes! It sounds like the heat might be too high, causing the outside to cook quickly while the inside doesn't cook enough. We'd recommend cooking the pancakes without a lid and at a lower heat setting to help them cook more evenly. If they're taking too long, you could also try making them smaller or thinner, which can help them cook through more quickly. Hope this helps for now☺️

These are absolutely eye closing! I didn’t have applesauce so I used the mashed banana. I didn’t have soy milk so I used 1.5 cups oat milk. I also added 1 tbsp of ground flaxseeds. Otherwise I followed the recipe as instructed and I am pleasantly delighted. I will however use just the one cup of milk next time. Thanks for a healthy version of something my family absolutely loves ❤️🥳🤗

Question: I always make batches of oat flour in advance, to have it in stock - do 2 cups of whole oats equal 2 cups of oat flour?
I've put 2 cups oat flour, but I have a feeling a little less would be better for a fluffier consistency.

Hey there, Katie, indeed cooking the pancakes for too long or at too high of a heat can lead to drier pancakes. Turning the heat down a touch and reducing the cooking time can help. In case you use cup measurements, it can also help to gently spoon the rolled oats into the cup so they're not too densely packed. Too many oats can also lead to drier pancakes 🤗

Delicious and very filling as not light as air with no substance. Perfect sweetness for us, as they complimented our blueberries but also great to snack on later on its own for that sweetish craving of snack on the go 😋 I added 1/2 cup extra milk for 3 servings to make them a bit lighter for my non plant-based, hot cake lovering family and they were sold too!

I am completely out of rolled oats at the moment, but would still really like to try these pancakes - because it uses applesauce and does not require to make buttermilk like your other recipes.
Would it work if I swap the oat "flour" for some regular wheat flour (or maybe 2/3 wheat and 1/3 rice flour for example)?

Hey Laura! We can't say with certainty since we haven't tried it. If you experiment with it though, the batter may need a different amount of soy milk since wheat flour absorbs liquid differently than oats. Let us know how it goes if you test it out 🤗

I just finished my breakfast, and they turned out great!
I used way less milk (around 40 to 50 mL to get the right pancake consistency) for the same amount of applesauce, and used around 40g of wheat flour - I wanted to be sure it would work before making a big batch. It made two big pancakes, and with the baking powder and apple cider vinegar, they were very fluffy 🥰

I regularly make a quadruple batch of this batter and make half of it into pancakes and half into waffles.
Then i put it all in the freezer. Then I just put both in the breakfast rotation for like 3-4 weeks. I put either pancakes or waffles from the freezer into the fridge and then reheat them in tje oven while i cut up fruit for toppings. Easiest and most delicious breakfast ever.

We haven’t experimented without them but have heard positive reviews for pancakes with a banana base for little ones! This was so delicious and simple to make! Loved every bite and it smelled so good while cooking. Since I used oatmeal flour instead of grinding the oats, should I still have used 2 cups of flour or a bit less?

Hey Tanvi, usually one cup of oats yields around 3/4 cup of ground flour. You could get away with adding less flour (such as 1 and a half cups) if pancakes that spread more easily are desired. A tad more liquid could also thin out the batter. Thicker pancakes using more flour are also lovely though 🥞

I'm just wondering, is the use of coconut oil in the dough required, and what's its purpose in this case?
Also why didn't you use an egg? It was replaced by the milk in this case?

Hey Claudia, the coconut oil helps to soften the pancakes so they're fluffier in the middle and crispier around the edges. You can substitute it for plant-based margarine or vegetable oil. We've also heard a positive review with omitting it and adding extra applesauce as well. We didn't use egg in this one as we use plant-based products here at PUL. We hope this helps fro now and you enjoy the pancakes if you're able to give them a try 🙂

My husband and I decided to try oatmeal pancakes and I chose this recipe because it seemed easy and I had the ingredients or was able to substitute some of them.. (my apologies for not sticking to the recipe). I used skim milk, honey and olive oil as replacements and had to cook the pancakes on lower heat than to recipe called for, but we both thought they were delicious! For someone with food allergies/issues theses are great and for those of us fortunate enough to be able to eat anything, the oatmeal pancakes were a wonderful treat.

My toddler and I made this for breakfast and it was just the perfect way to share the morning. The ingredients are few; staples for us. The prep is straightforward. And a bonus is that tasting the batter comes with no danger because there are no animal products included :) We had so much fun measuring, pouring, and mixing. The pancakes themselves are so delicious and quite filling, too! This will very likely be a regular meal for us. . I'm also wondering about adding some of my sourdough discard? Hmmm. . Hey Diana! We haven't experimented with it, although it might work with some adjusting. Semolina flour contains gluten compared to oat flour which is typically lighter and gluten-free. Since semolina flour contains gluten, it likely will absorb less liquid and change the pancake texture. Perhaps starting with less flour and being careful not to overmix may be one approach. Do let us know if you experiment with it 😊

Delicious! Though mine where a little thick and grainy, I fault myself for that as I have never made oat flour before and don’t think I blitzed it long enough to get the texture this recipe needed. But nonetheless was still delicious topped with all natural peanut butter, bananas and strawberries. Will definitely make again!

Thanks for sharing your experience, Danyelle! We recommend blending the oats to thin flour-like consistency if possible. Adding some extra liquid (such as soy milk or water) can also help if your batter is on the thicker side before cooking. So glad the pancakes were enjoyed though 😃

This is my go-to oatmeal pancake. I make a batch and keep them in the fridge. I warm them up in the microwave briefly then top them with peanut butter. The heat melts the peanut butter and creates an ooey-gooey topping. What a decadent and nourishing snack!

I am a big fan of this awesome pancake recipe because I love oats for breakfast and this is a way of incorporating them into pancakes which is something else I enjoy from time to time, especially at the weekend! They are super tasty and the perfect consistency. My favourite toppings so far are coconut yogurt, maple syrup, chopped pistachios & berries. I am always excited to make them again. 😊

Since I found this recipe I don’t do pancakes any other way! I have done these for countless people and everyone loved it. The texture is perfect, which I was worried about because oats/oat flour tend to be denser. But they are nothing like that at all. They are soft but yet firm, and I think it is the perfect mix of chewiness with melting in your mouth. Absolutely love!!

Thanks for the recipe; one of the few vegan pancake recipes that work so well in a frying pan! Today I made a few changes to the recipe that worked really well. Since we didn't have apple sauce at home, we blended two peaches to make the sauce and then combined all the ingredients in a blender. This blog has really changed my outlook on food and veganism. These have become a Sunday morning staple for me and my partner. I have not been a big fan of pancakes in the past, but I am an oatmeal lover. These are the best of both breakfast foods. I've made them with both applesauce and banana. I'm an apple lover and prefer the subtle apple flavor but my partner loves it when I make them with bananas. I love to top mine with a flavored culina yogurt and some berries. Anyone I have ever made these for has reached out for the recipe. They are just so comforting, warm, cozy and delicious!!

This recipe is my Sunday morning treat especially when I see a few bananas starting to turn brown (I still haven't tried the recipe with applesauce). For toppings I use warmed up frozen berry mix, vegan yoghurt and some peanut butter. It's delicious 😊

Firstly, the pancakes were great. The consistency was perfectly fluffy on the inside and lightly crisp on the outside by cooking them in cast iron. One thing that also worked for me is letting the freshly mixed batter sit in the fridge for a few minutes, so all the flour can hydrate. It’s a good time to preheat the skillet and clean up any dishes, too. Fair warning though, the batter is extremely delicious on its own, so make sure you make a double batch if you have no self-control like me! Highly recommend :)

I love the flavor of this pancake!!! You can taste the cinnamon with just a hint of apple. It’s so delicious! I do have a question though. Can you sub 1 cup of the oats with 1 cup of all-purpose flour? The texture was a little different, and I was wondering if there was a way to make the texture of the pancake more like that of a typical pancake. It might be that I didn’t spread the pancake enough. Yours look more even than mine. Please let me know your thoughts!

Hey Clarissa! So glad the pancakes were enjoyed. Some things that come to mind to help with the texture are adding more liquid (such as plant-based milk) to help the batter spread more, using fresh baking powder to help with the fluffiness, and making sure the oats are grounded up well to reduce clumps!

You could use all-purpose flour in place of the oats. The recipe may need a bit more liquid with this substitute, such as a 1/2 cup more of plant-based milk. Adding the extra liquid slowly can help you gauge how much to add based on the consistency 🤗

OMG these pancakes are wonderful! Easy to make, and they have a nice flavour of their own. I appreciate that they don’t stick in the frying pan and don’t break. I’ve never felt more healthy eating pancakes for weekend breakfast. Having type 1 diabetes, these pancakes are great as there weren’t any insulin dosage issues or delayed blood sugar peaks👏🏼
