Ingredients

  • 5.3 oz (150g)
    silken tofu
  • 1
    frozen banana
  • 1¼ cups (300ml)
    unsweetened soy milk
  • 1 cup (130g)
    frozen mixed berries
  • ¼ cup (65g)
    natural peanut butter
  • 3 Tbsp (17g)
  • 1½ Tbsp (23ml)
  • 2 tsp (10ml)

Optional garnishes

  • natural peanut butter
  • banana chips
  • freeze-dried strawberries
  • chopped roasted peanuts

Directions

  1. Place all the ingredients in a blender.
  2. Blend until smooth.
  3. Pour into glasses and garnish as desired. Enjoy!

Notes

  • Nutrition tip: To keep this smoothie high in protein, we recommend using soy milk or pea milk. Other plant milks will still work, but they tend to be lower in protein.

Storage

  • This smoothie is best enjoyed immediately.

This recipe looks delightful! Do you have any substitution suggestions for silken tofu? I've been diagnosed with hypothyroidism and have been asked to limit soy intake.

Thanks so much, Manushi 🫶 You could try replacing the silken tofu with an unsweetened, soy-free Greek-style plant yogurt for a similar creamy texture. Alternatively, a spoonful of seeds like hemp and a splash more plant milk, as needed could work nicely 🤗 hope you enjoy the smoothie!
