I want to replace vanilla pod with essence. But what will be the conversion?

Hi Shilpi, you can replace one vanilla pod with about 1 to 2 teaspoons of vanilla essence. Adjust to taste though as essence is often more concentrated than fresh vanilla 🤗

I made this a few days ago and it's been on my mind ever since with 2 glaring questions- where has this been all my life and why has no one told me about it!!

I've just gone and picked several kilos of blueberries at my local farm (Australian summer here 😍) and plan to make a large batch to get me through the year.

In my very small batch I turned this into a chia jam (and we *love* our chia jam, thank you PUL!) however I'm strongly thinking a chia jam will not store long term in a water bathed processed jar.

I'm thinking of doing two batches, one set thick with sugar as the recipe instructs, and one a fair bit runnier/wet to add chia seeds to as we open a jar at a time. Do you think this could work?

I'm also planning on straining a third lot for a cordial syrup, my kiddos and hubby adored the blueberry and lavender ginger fizz, so perfect for summer and I suspect a lovely tea sweetener through winter 😍

Hey Kesha, yes when you're spooning the cooled-off jam into the jars you can remove the vanilla pods 😊
