Lemon tea

4 cups (960 mL)boiling water, ideally around 185°F (85°C)

4white tea bags

3lemons, juiced
Peach thyme syrup

6peaches, roughly chopped

10sprigs fresh thyme

1 cup (240 mL)water

1½ cups (166 g)ice cubes

½peach, sliced

4sprigs fresh thyme
Directions
- Add the boiled water and tea bags to a large jar and let it steep for 8 - 10 minutes.
- Then remove the tea bags and let the tea cool off. Once cooled, stir in the lemon juice.
- Add the peaches, thyme, water, and maple syrup to a saucepan.
- Bring to a boil, then reduce to a gentle simmer and cook uncovered for about 20 minutes, stirring occasionally. Once softened, mash the peaches using the back of a spatula or tamper.
- Place a sieve over a bowl and strain through the peach mixture. Using the back of a spoon, press out as much liquid from the mixture into the bowl as possible*. Let this cool off completely.
- Divide the ice cubes between your glasses. Then pour in one part peach syrup to two parts of the cooled lemon tea mixture.
- Taste test and sweeten with more maple syrup or agave syrup if desired. Stir, garnish, and enjoy!
Notes
- * No need to throw away the peach purée that remains in the sieve. You can either eat it as is (it's like eating applesauce!) or add it to a smoothie or oatmeal.
Storage
- The syrup can be made ahead and stored in a jar in the fridge for up to 3 days.
- The tea and syrup mix can be stored in a glass jar in the fridge for up to 2 days, but add the ice just before enjoying.

Yum! Refreshing and versatile. One time served as is in recipe. 2nd time served as cocktail for a friend get together with a shot of bourbon and fresh blackberries. Pulp is delicious for breakfast or a snack on coconut yogurt and Sadia’s granola.

A refreshing drink has never tasted as marvellous as when hiking 14 km in a national park🥵😂. It was a perfect combination of sweet peaches, sour yet fresh lemon and mild tea (sencha at my first try). Luckily my boyfriend likes this drink too, so I will make it many times in large batches
I made this for the week and for a 4th of July family gathering. Both were hits! The peaches stewing as they softened brought a lovely aroma to the house as well! Thyme, peaches and tea are all things you can plentiful in Texas in the summer- perfect summer drink!

I’m still not quite sure of this one. I didn’t have white or green tea and so used black tea instead. Made it pretty light because I didn’t want an overpowering taste of tea but what actually became overpowering was the lemon flavour. My partner, though, loved it and could taste the peaches more than I could. I am committed to trying this recipe again by sticking to the actual ingredients listed. Will keep you posted. For now, I can say this - don’t try this with black tea. I’m sure it tastes better with a subtler tea.
Made this drink for Christmas time and it was quite a hit. The thyme added such a pleasant aroma and taste that elevated the already amazing tasting peaches. Going to try it with purple plums, or a mix of peaches and plums next. Thanks PUL Team.
Made this drink for my southern parents here in Oklahoma, they’re not big on anything truly healthy, they’re more of the “steak and potatoes” type, but I’ve been trying to get them to get more plant-based nutrients, so I made this.
2/3 the recipe using thawed frozen peaches instead of fresh, and I think it’s perfect! I’ve never tried thyme on its own, so I was a little nervous to have it in a drink, but I loved the result. This summer when we’re out in the garden, I’ll probably make a big batch of this for the next few days or for the hot sun riding horses. I made this two years ago and this summer as well. It's the best summer refreshment for me! The thyme makes it a surprisingly exquisite drink, perfect for the hot days and for the cold ones as well. I like how the sweet peach combines smoothly with the lemon tea and the thyme. 10/10

Can we use white peach instead? I couldn't find yellow peaches today. Also wondering if we can use dried mint instead of thyme? If so, at what point should it be added? Should I cook with peaches or just add later on top? Thanks!

Oh.. and I didn't have fresh thyme on hand, so I used dried thyme, which seem to work just as fine.
(Though keep in mind, that I haven't tried with fresh thyme ;-). )

Loved this recipe! Made it twice last summer and it was highly appreciated by my family, too! I made it with rosemary instead of thyme though (couldn't get fresh thyme anywhere in Bucharest, August last year...) I intend on trying again but with thyme this time :)

It was good. But it didn't feel worth the effort to be honest. Because it took quite some time.

I really like this recipe, it's sweet, refreshing and the thyme adds nice herby twist to it. I think it's one of my favorite flavor combo, since discovering this recipe I also made peach jam with thyme.

I super recommend this drink. It's refreshing and not overly sweet! Also leftovers are great in a smoothy like she says :) I would have never thought to put thyme in a drink but I love it!
