Hey, so we eat arepas in Colombia quite regularly and I can give you some ideas.
In Colombia we eat them at breakfast with scrambled eggs with chorizo for example. For a vegan alternative, they are a great side for a main meal that has grains and rice such as beans, lentils, etc.

So maybe with tofu scramble and some of the PUL chorizo would be an option for a vegan version of the traditional way to eat them? This is probably as close as I'm going to get that part of the world so I'd like to know if these are a good dupe.

Yes! Actually that would be a great alternative.
You can Google 'huevos pericos paisa' and you should be able to see what they look like. Always adding tomatoes and spring onion.
