1 Tbsp (15 mL)vegetable oil

1medium onion, diced

1medium potato, cut into 1 cm cubes

1 cup (205 g)dry green lentils, preferably soaked overnight†

1 cup (240 mL)water

½ tspground turmeric

½ tspground cinnamon
-
½ tspsalt, plus more to taste
Directions
- Add the oil and onions to a medium pot on medium-high heat and sauté until the onions are lightly golden, about 3 - 5 minutes.
- Add the remaining ingredients. Cook at a gentle simmer, partially covered, for 20 minutes. Stir occasionally.
- Serve, and enjoy!
Notes
- †Soaking isn't necessary but helps to increase nutrient absorption and quickens cooking time.
Storage
- Store in an airtight container in the fridge for up to 4 days.

This recipe is so incredibly simple and delicious!! I will be making it regularly. I never would have thought of pairing cinnamon with lentils and potatoes, but it works amazingly well. ❤️❤️❤️
In the last month, I've cooked this three times, including last night for a dinner with friends. This time I added spinach and cherry tomatoes in the end (the tomatoes, I put them in a pan with pepper and oregano first to make them softer and more flavorful). Delicious and easy, absolute go-to.

I am so confused is the 205 grams of lentils before or after soaking?
I'm challenging myself to use up all foods in my fridge and pantry instead of going out to eat for 2 weeks since I'm not working. I saw I had 1/4 cup of green lentils and onion and went to ask my mom for a potato. Lol. The lentils were soaked for almost 90 min and became 1 cup :) I was hesitant on turmeric and cinnamon but trusted. Wow!!! Sooo good. I needed a lil more salt but that's an easy fix. This is delicious and so easy. PUL for the WIN

I was hesitant to put cinnamon in the food as I personally find it only fitting for desserts, but I actually loved it so much! The taste is there but it just adds to the flavour and doesn't overshadow the lentils or the potatoes. I am so happy that I now have an alternative recipe for my lentils too!

SO delicious, easy and quick! I also ended up spooning aside some of the cooked lentils (once the dish was completely made) and mashed into a paste to use as a spread for wraps and sandwiches.
