"Kichaloo" is potato, and "Banjan" is eggplant in Dari, one of the languages spoken in Afghanistan. Traditionally, Banjan is a dish consisting of fried eggplant, tomato, and a yogurt sauce. Growing up, my mum made her own version of the dish, which included potatoes and used much less oil than the traditional Afghan banjan recipe. It's a comforting dish that immediately transports me back to Mum's kitchen. Serve this dish with some toasted bread and enjoy a taste of my childhood.

Ingredients

Banjan (eggplant)

  • 3
    small eggplants
  • 1 tsp (6g)
    salt
  • 2 Tbsp (30ml)
    vegetable oil, for frying eggplants
  • 3
    medium potatoes, peeled, cut into ½ cm thick rounds
  • 3
    medium tomatoes, sliced into 1 cm thick rounds
  • 2 tsp (10ml)
    vegetable oil, for frying garlic
  • 3
    garlic cloves, crushed
  • ½ tsp
    ground turmeric
  • ¼ tsp
    salt
  • ¾ cups (180ml)
    boiling water

Garlic yogurt sauce

  • 1 cup (260g)
    unsweetened soy yogurt
  • 1
    garlic clove, crushed
  • ½ tsp
    salt

Directions

  1. Trim the tops off the eggplants. Optionally, use a potato peeler to create a decorative striped pattern by peeling alternating lengthwise strips of the skin.
  2. Slice the eggplant into ½-inch (1½ cm) rounds and place them in a large bowl. Sprinkle with salt and massage it onto both sides of each slice.
  3. Let the eggplant sit for 2 to 4 hours to draw out excess moisture. By the end, it should be "sweating" with a pool of dark liquid collected at the bottom of the bowl. This helps reduce oil absorption later.
  4. Use a clean kitchen towel to squeeze out as much moisture as possible from each eggplant slice.
  5. Heat half the oil in a sauté pan over high heat. Once hot, reduce to medium and add half the eggplant in a single layer. Fry until golden on both sides, then transfer to a plate. Repeat with the remaining oil and eggplant.
  6. Once the last batch of eggplant is golden on both sides, reduce the heat to low and layer the sliced potatoes, tomatoes, and cooked eggplant in the pan.
  7. Meanwhile, heat the oil and garlic in a small pan over medium-high heat. Cook for about 3 minutes, or until the garlic turns golden.
  8. Then add the turmeric and salt, stirring for 20 seconds.
  9. Add the boiling water and stir to dissolve the turmeric. Then pour the mixture over the vegetables in the sauté pan.
  10. Cover and cook on medium-low heat for 35 - 40 minutes without stirring, as this will keep the vegetables from turning to mush. Serve with a drizzle of garlic yogurt, alongside toasted bread and salata. Enjoy!

Storage

  • Store in an airtight container in the fridge for up to 4 days.
  • The garlic yogurt is best enjoyed immediately, but can be stored in a container in the fridge for up to 1 day.

Wow wow wow what a treat, and the delicious warm and complex smell is equally as important as the taste. I was a bit intimidated at first by the different steps but it's actually really easy to make.

I am curious why the eggplant needs to be peeled in that specific way.

Juicy and delicious!! Will make it again. I served it with white beans for some protein, and it was a nice combination. I didn’t add garlic because my stomach is sensitive to garlic, and it was still very tasty.

Yaaasss delicious. I used yogurt on mine and feta for my non- vegan husband. 2 enthusiastic thumbs up! I added some sliced zucchini too because why not! Served it with brown rice and homemade pita. Thanks Sadia for another great recipe!

Simple and delicious. 25 min of cooking was sufficient for the portion I made. I didn’t add salt into the bouillon (as the eggplant were already salty from the first step). I cooked everything in one pot. I used coconut yoghurt instead of soy and I liked it. Next time, I will mix the yoghurt and garlic sooner, so it has more time to infuse.

What a treat! I love that the turmeric gives the potatoes a yummy yellow color. If you serve with some fresh parsley on top the dish becomes satisfyingly colorful. And that sauce is heavenly! I added one extra clove of garlic because why not 😉 great recipe, thank you!

I've been looking for a recipe like this, since I left my hometown where I would frequent this lovely afghan couple that made really yummy dishes, and this one was my favorite! I usually don't cook things that need me to do things multiple hours in advance, but it was sooo worth it and easy. With how flavorful it tastes, i thought it would have way more spices, but it really is that simple. Thank you so much for helping me learn how to create something so joyful with my own hands :) i also added chickpeas for protein and I think they worked wonderfully.

Hi, I cook a lot of Palestinian dishes that require vegetables deep frying. What I like to do is to air fry the veggies in the oven with tiny bit of oil. It gives similar taste and is little faster than a pan as you can put a lot of vegetables at once and leave it for 10-15 min.

I wonder if we're supposed to have crunchy or soft eggplants soaking up the rest of the stew/sauce/vegetables? Since I believe air frying make eggplants slightly more crunchier than deep frying (or is it just me?)

I think even after you air fry them they are little crunchy, but rest of the sauce will soak into them. I think of eggplant as sponges - which is why deep frying them is like having cup of oil.
