1medium onion, chopped

1 tsp (3g)ground turmeric

½ tspsalt, or more to taste

½ tspground black pepper

2 cups (480ml)water

1 cup (190g)dry brown lentils, soaked overnight

1 cup (200g)basmati rice, soaked overnight

Directions
- Drizzle the oil in a large pot over medium-high heat. When hot, add the cumin seeds and cook for 2 minutes, stirring throughout.
- When the seeds start popping, add the onion. Cook for 5 minutes, or until golden.
- Then add the turmeric, salt, and pepper. Toast for 20 seconds, stirring throughout, and then add the water.
- Drain the water from the lentils and rice, rinse, and add this to the pot.
- Bring to a boil, reduce to a simmer, cover the pot with a lid and let cook for 15 - 20 minutes*.
- Drop the heat to medium-low. Using the handle of your wooden spatula, create multiple craters in the rice.
- Cover the lid with a clean kitchen cloth, and place the lid on the pot**. Cook for an additional 10 minutes. Then the rice is ready to serve!
Notes
- * If the rice is not fully cooked by the specified time, add a small splash of water, cover, and continue cooking.
- ** This prevents water droplets from falling into the rice, resulting in a light and fluffy texture from steaming.
Storage
- The rice can be stored in an airtight container in the fridge for up to 3 days.

This burned at 15 minutes in a Le Creuset Cast Iron Braiser at medium low. The unburnt part was fine to eat, but it either needs to be at low for a cast iron pan that holds in heat, needs more water, or oil. I salvaged the top of the pan which was cooked through, but it needs more flavor - maybe some garlic and a bit more salt.
Wow. This is amazing!!!! Wondering if steps 6 and 7 were to be done. I did not leave it for the full 10 min nor did I bring it up to medium high. There was a bit of a crusty burn on the bottom so I took it off the stove. Please can you let me know if steps 6 and 7 are required.

This IS really delicious, most mther recipes I know add dried fruit, so I added barberries and 2 dates, and one more onion, so crying would BE worth it. Soaking the lentils IS Not only healthy, but equalizes the cooking Times which IS so convinient, I will totaly makes this again!
Great recipe! The cumin seeds add a nice surprise. I added chopped raisins when cooking the onions and it gave it a bit of a sweet burst here and there. This is a nice break from pasta or noodles, loved it!
