Smokey lentil stew

2 Tbsp (33 g)tomato paste

½ Tbsp (3 g)ground cumin

3 cups (720 mL)vegetable stock

1½ cups (38 g)kale, finely chopped

1 cup (180 g)cooked brown lentils

⅓ cup (67 g)uncooked basmati rice, rinsed

2 tsp (10 mL)dark soy sauce (optional)

Directions
- Add the oil, onion, and salt to a large pot on medium-high heat. Cook until lightly caramelized, about 15 minutes. Add splashes of water as needed to deglaze the pan.
- Once caramelized, add the garlic, tomato paste, smoked paprika, and cumin. Cook for 1 more minute. Stir throughout.
- Add the remaining stew ingredients.
- Cook uncovered at a simmer until the rice is cooked through, around 15 minutes. Stir often. Taste and adjust the seasonings as needed.
- Divide the stew into bowls and top off with dollops of aioli. Garnish as desired, and enjoy!
Storage
- Store in an airtight container in the fridge for up to 3 days.

It turned out very fast, and is delicious, the only adjustment I need to make for myself is less soy sauce:)
I loved it!! The flavors mix well together. I added some diced butternut squash I had in the fridge to add even more flavor.
Delicious!
My lentils were out of stock, I used black beans and seitan instead.
The aioli made it perfect.
