I didn’t have agave syrup so I used maple syrup, the same for pecans, didn’t have them so used regular walnuts, worked just as great. 😊

I'm honestly so surprised by my rating. Halfway through making this I remembered that I don't actually like lentils, or raw spinach, and that, because I have an onion intolerance, I needed to skip the shallots. I was convinced that this would be a recipe I'd eat only once. But no, it is wonderful. It's such a great combination of tastes and the dressing really suits the salad. I would certainly recommend it!

Yummy! I didn't have any vegan feta or the ingredients to make my own so I used vegan cream cheese and it worked out beautifully.

Wonderful!!! Made for a holiday brunch today and it was a huge hit! Added arugula and another salad mix I had along with the spinach and reduced the amount of salt in the vinaigrette by half. Still delicious! Will definitely be making again!

I had half a squash left from yesterday's tea, so thought I'd try this recipe. So glad I did! My other half isn't big on salads as meals, but he found this filling. It's really tasty and I quickly roasted a few pecans for the last 8 minutes of roasting the squash. They added a nice crunch to the soft squash. Lovely!

Super fresh! I had premade grilled pumpkin & onion so this was really quick to put together. I still think the dressing needed a bit more tanginess to I added a splash of balsamic vinagre, worked perfectly! ❤️

Really easy to make! I take advantage of this recipe when I am in follicular/ovulatory phase and I am craving hearty, fresh salads that are protein packed. I also cooked a big batch for dinner and took some the next day at the office, with the vinaigrette in a separate container - super yummy as a cold dish as well, even though it’s a cold time in Belgium ❤️.

It was an absolute hit!!! I don't like spinach much. I was so apprehensive to eat it in salad as being an Indian We always have spina h in gravy form, but it was just lip smacking delicious!!!!! I replaced the butter squash with Pumpkin as I couldn't get it locally.
