I love this salad! It's so refreshing, juicy and bright! I put black lentils, thinly sliced apple, baby spinach and pomegranate seeds into it, to make it more filling and it was absolutely perfect 🤤😍

i usually don’t like fennel, i only have it when it comes in my weekly subscription organic grocery basket. i am always willing to try and find one, just one, recipes that could make fennel enjoyable for me. don’t ask me how many fennel i’ve put in the bin because i couldn’t eat it 🫣 and this recipe is definitely one. the orange and olive oil mask the strong flavor of fennel for me, but the key thing is to slice it very thinly. and i used a bit more orange than the recipe called for as well

I’m not sure a more refreshing summer salad exists than this. It’s the perfect balance of sweetness and acidity. I ran out of apple cider vinegar, so I used pink gin vinegar instead, and I did t have pine nuts, so I used pumpkin seeds instead.
