Tabbouleh is a salad enjoyed in Lebanon and Syria, and is traditionally made with bulgur. We put our own twist on this classic by using fonio, a gluten-free grain from West Africa. Loaded with refreshing herbs and juicy tomatoes, and seasoned with zesty lemon and olive oil dressing, this salad is the perfect accompaniment for any meal.

Yes! Delicious! And I love the use of fonio. The more people eat fonio, teff and sorghum, the more feasible it'll be for farmers in Africa to change from the European grain varieties back to the African varieties. Which will be much better for the soil health and water management! So everyone make this delicious food and buy African grains please!
