Tried making this today and initial flavour is nice but the onion takes over very quickly and very powerful. And tips on how to fix this I thought adding more of the rest of the ingredients but worried it won't work and eggplants are fairly expensive at the moment, also hate wasting food so hoping to save this dip. I also noticed lemon juice listed on the info but not in the recipe?

Hey Gypsy, thanks for trying to recipe and sharing your experience with it! If the onion feels too strong, you can mix in a little extra roasted eggplant (if you have some cooked on hand), a drizzle more olive oil, or even a spoonful of tahini or unsweetened yogurt to help mellow it out. Letting the dip rest in the fridge for a few hours also softens the sharpness, so don’t worry, you can definitely save it 😊 The lemon juice mentioned in the information section was a slip-up, so you can skip it here (unless you'd like some extra zest, of course)!
