This was phenomenal. We grow white eggplant but never know what to do with it. My husband absolutely loved flavor but struggled with the silky texture(I thought the texture was fantastic). He asked if we can maybe add in some pasta as he thinks it would be fabulous as a creamy sauce with some added protein, which I never would have thought of but think sounds amazing. I used cashew cream I made from loveandlemons.com and all the flavors together were great. I wouldn’t be at all surprised if PUL has a fabulous cashew cream recipe but I didn’t want to switch back and forth between recipes on the app. This recipe is going in the rotation for sure, even if we need to cook up some pasta to accommodate everyone’s texture issues😉
I just finished making this soup and it’s AMAZING. I never know what to do with eggplants so ai decided to try with this recipe and oh my, I will definitely be making this one a lot during this autumn and winter. It has an amazing taste and is quite easy to make.
I have never heard of eggplant soup. So tried it and found I loved it. There was a nice kick of spice and it was a hearty soup! It is summer right now for me but I think this will be a favourite winter soup option for me. It also took little time to put together.

I have added fried onions instead of croutons, and sunflower seeds as a topping, and I loved it! It was filling and cozy.♡
Lovely soup! A great way to get aubergine/eggplant into my diet as I don't like the texture. I used butter beans instead of soy cream - just added them with the aubergines and blended.

Soooo good! Easy to make, very yummy and also great to make ahead and eat throughout the week. I added some fresh garlic which made it taste even better for me 😋

So tasty and warming. Really easy to make. I popped the eggplants in the oven early this morning and then, I just cooked everything else before lunch. It didn’t take more than 20 minutes.
I didn't know what to expect from this soup, but it ended up being delicious. I only had to change things a bit. I used coconut cream and tomato sauce with basil.
The soup was delicious and easy to make 😍 I usually don't eat aubergine because I don't like the texture of grilled aubergine, so this is a perfect way to integrate it in my diet.

This is really easily cooked dish, that surprises with the depth of flavour. The eggplants don’t come out too strong and the spices blend into eachother nicely.

Just finished to cook this wonderful soup and it is so good! I used freezed grilled eagplants that I had in the freezer and it works very well, even if I think that with fresh ones it will be better with the smoked taste. Will do next time. Thanks the PUL team for this conforting wonder !❤️

Wow! I’ve never made an eggplant soup before, and this was truly amazing. I’ve made quite a few delicious soups, but this one took the top spot. Creamy and flavorful. I had a few in-season mushrooms that I sautéed and added. Just delicious!
