Used whatever I had at home: replaced cannellini beans with chickpeas, soy cream with oat cream, so it turned out less creamy than original recipe, but still tastes great! Will get listed ingredients next time and I'm sure it will be even better!

Utterly delicious! We used savoy cabbage, as the shop had no kale. Equally great and definitely goes into the regular meals rotation.
Delicious :) I added celery instead of bell peppers, soy milk instead of soy cream, some extra mushroom seasoning and mixed beans instead! Otherwise followed everything else. Will make again!

So good! It is a perfect recipe for those of us who eat plant based and live with people who don't, which could just switch out the vegan sausage for meat instead. Will absolutely make this again!

Easy, delicious, and comforting. Next time might try to chop the sausages and stir them into the soup after cooking. I used Beyond sausages, the flavour combination was great 🤤

I honestly just made this because it used a few ingredients i had to use up, but I wasn't really expecting it to taste super good. But wow - was I wrong 😅 this souo was soooo good and I will be definitely making this again 🥰
This is a lovely soup that reminds me slightly of zuppa toscana (my fav). I used V2 British sausages and added them to the soup after frying for extra flavour. Only thing I changed was a chicken style stock cube as well as the vegetable. SO good!!! I will be def making this again for work lunches. All 3 of us (son won't eat soup, his loss!) really enjoyed it.
Had to add some spices and nutritional yeast, but after that it was amazing.
Truly so delicious. I added mushrooms and a couple extra spices, like paprika and Italian. New favorite for my husband and I.

This is a great soup! All the different veggies give such a great depth of umami and sweetness, plus work wonders on satiety. I managed to find a super nice spiced sausage made of field pea from a Swedish manufacturer, which added some heat. However, I would also like to elevate the flavour just a bit, realising that there are no herbs or spices!? Perhaps some paprika powder, bay leafs and sage/thyme. I will for sure make this recipe again😊

Good soup, I'm exploring ways to add flavor. I added about .5 bouillon cube, an extra garlic clove and for leftovers, plan on adding herbs, Italian blend. I this soup topped with homemade gremolata (chopped parsley, lemon zest, garlic, and salt) would be delicious. Lastly, since grocery stores near me never have soy cooking, I made it out of cashews. Soaked half a cup of cashews in hot water for about 15-20 minutes and blended the cashews with half a cup of hot water + 1-2 tbsp of hot water and it worked well!
Delicious! Has a definite zuppa toscana vibe. I added some chili flakes for a little bit of heat and increased the amount of vegan sausage. I’m sure it will be a winter staple!
It is So delicious and cozy! Even my picky kids enjoyed it. I added the sausage at the end of cooking to give the soup more flavor, but that was a mistake. The soup didn’t need that extra flavor, and it turned the sausage soft instead of crispy, so I will follow the instructions next time and serve the sausage on top of the soup. Thank you!

So simple but so tasty! You could definitely add some more herbs to jazz it up, but I really love it as is. Very easy and comforting.
This was ok, if the sausage that I used wasn’t flavourful - it would have been much worse. I feel like it could use a lot more herbs for flavour. I added some chili flakes to make it more interesting. Otherwise a great base!
The soup came out amazing, I added mushroom bouillon powder, along with turmeric and za’atar after reading the comments. I can’t wait to eat this for the week!
This was so good. For those of you that use better than bouillon make sure you use a minimum of 4tsp. Mien tasted water at first and adding some extra bouillon helped. It was a great way to use up extra veggies and will be perfect for the upcoming cold months :)
I was craving soup because I was feeling sick. This really was soothing. I added a little turmeric and za’tar spice and some mushrooms that were in the fridge. I will for sure make again.
I love this - with some toasted sour dough on the side this really feels like eating a complete meal. I swapped the kale for left over baby bok choy. Delicious.
Made it for husband and friends - such a hit! I swapped the beans for orzo and used a ground spicy Italian sausage. I didn’t end up adding the milk to keep it broth-y. I want to immediately make it again!

Loved it! I am not vegan so I used the sausage that I have on hand it was soooo good. I imagine that it would be just as good vegan and plan on making it without sausage and just adding more beans. Also substituted for chickpeas instead of cannelini’s and added some mushrooms! Can’t wait to try more recipes!

In Hungary we have a similar soup but made with savoy cabbage. I loved this version and I am so happy to see the nutritional values in it.
