I liked this recipe but it is quite sweet, I like to add red chili peper, vegan bacon bits and peas. The capers and panko crumb give the meal extra flavor and texture.

I have a question about the capers. I could only find capers in a jar. I drained them and fried them, but they didn't turn golden at all and just tasted of ... well, caper jar juice πŸ˜€ Is there another way to get capers otjer than from a jar?

Hi Julie! Jarred capers are the most common option, as they're preserved in brine. For frying, pat them dry thoroughly after draining to remove excess moisture, which can prevent crisping.

Hey Magdalena! Thanks for the question. Our butternut squashes tend to be between 500-600 grams. For this recipe, a bit more squash will give a more intense flavour, but shouldn't alter the texture too much. You can always add extra water and boullion to help smooth out the texture and flavour if needed!

I found this dish a bit too sweet for my liking. It's a good and unusual way to use butternut squash (I grew 30 this year so yay!) But I think I need to adjust the flavour boosters a bit to make it more savoury - maybe more miso paste? I think I'll try it again but have a play with the quantities next time.

Hi Devanshi, you can switch butternut squash with acorn squash if you'd like. A whole butternut squash is usually around 500g for us. If you are using the acorn squash, we'd suggest trying to use about 250g for this recipe 😊

Hey Leila, thanks for sharing your experience with the recipe. We've just made an adjustment, changing the low-sodium stock for a bouillon cube and water, which should help to pump up the flavour. It's also possible your butternut squash was larger than our which could dilute the flavour. Ours butternut squash is usually around 500 - 600 grams, so half is around 250 - 300 grams. I hope this helps in case you decide to give this recipe another go! πŸ™‚

Delicious and easy recipe to make. I’m not the biggest fan of capers so decided to leave those out but make the toasted breadcrumbs a little spicy instead which worked out really well

Hey there, Nedajane, oh no! Sorry to hear that this recipe hasn't wowed you. Did you happen to change any of the ingredients or portion sizes? Different types of miso pastes indeed have different flavour profiles. We tend to prefer white (also called shiro) miso paste as it's less salty and milder in taste. You can opt for other types, such as red miso paste, if you'd like a saltier taste. You could double the breadcrumb and caper toppings, as the capers would also add some salty flavour πŸ™‚

This is phenomenal! I didn't bother peeling my squash, so I did pass it through a sieve after blending to smooth it all out. I'm not quite sure how there is such a big flavour with so few ingredients. Don't skip the fried capers either, they are so good with this! The whole dish is super savoury and so satisfying. This might be my new favourite recipe!

Hey there, Connor, yes you can use an immersion blender or a food processor instead of a traditional blender. Simply blend the roasted veggies, vegetable stock, nutritional yeast, and miso until smooth. Depending on the size of your immersion blender head, you may need to blend in batches to ensure a smooth consistency☺️

I’ve gone 6 weeks straight making all your new recipes, and loved them all, but I didn’t like this one and could not finish it. There was a recipe I tried 4 months ago β€˜creamy miso noodles’ or similar and I didn’t like that either. I find the combination of creaminess and miso is too sickly. It was worth making it to try fried capers though πŸ˜‚. Ps eating 67 different plants this week πŸ™Œ thx to this app ☺️

Hey Jen, one of our team members based in Canada has seen DeLallo Orzo which is gluten-free in their local Loblaws and online in case that helps. Alternatively, you could use a small-shelled gluten-free pasta. We imagine a short-grain rice or arborio rice would work as well but haven't had a chance to test this out - the liquid ratio will likely differ, but you can simply add more stock as needed until the rice is al dente 😊

Hey there, Grace, the miso mostly adds an umami and salty flavour. Swapping miso sauce with soy sauce will change the flavour a bit, but we imagine the orzo should still turn out delicious. You could also substitute it for a bit of crumbled-up veggie bouillon cube for umami-saltiness (start with less than you think and increase to taste). Let us know if you try it out 😊
