Tasty and so simple!
Delicious! It not only looked very fancy but was also so comforting and creamy. I put red lentils in the Risotto for some extra protein and even more creaminess and paired it with the Crispy Kale Chips and crunchy Tempeh Croutons on top, which was heaven on earth β€οΈ
The stock took forever to absorb and that was on high heat, but other than that, it was a very easy recipe. If I discount the time taken for the stock to absorb, the recipe does not take long at all. It tastes great. Warm and cosy for when the weather is chilly.
It was nice but quite rich, so I had to serve it with a green salad. Also the vinegar was a strong taste, so only 1tbs next time. But thanks, we liked it.
I was wondering what the leafy greens are that show in your photo but are not included in the recipe? I went with kale. It worked as the dish is delicious. Probably the best hot beet meal I've ever had.
Hello! Really want to try this but I dnt think I have the nutritional yeast. Can that be subbed with something else or skipped without sacrificing flavour?

Not a favourite for the family, but probably down to me scaling up to 8 portions, cooking for too long and reheating some on a later day!
I cooked this for friends. It is a tasty and easy dish! It is a bit unsalted for my taste, but overall pretty good!
This dish is delicious!! I paired it withthe green beans amandine recipe from the app for a boost of protein.
I only used 5 1/2 cup of vegetable broth.
Tasty and easy to make. Added the zest of one lemon towards the end of cooking and a tsp of lemon juice upon serving - went really well with the sweetness of cooked beetroot.

Iβve added some roasted pine seeds to top it, along with grated Parmesan (the non vegan version).

What if we donβt have nutritional yeast? What could be the alternatives? And was curious why do we use this?
I was going to try this with wholegrain risotto rice but I forgot to soak it overnight so I used arborio. It came out really well and has the perfect balance of sweetness and acidity. Another great recipe.

I used more beets just because we had them.
I just did it and yummy!! I added baldamic vinegar instead of apple cider and it still gave it an amazing taste! I did a non-vegan version by adding grated grana padana instead of nutritional yeast. Yummy!!!!!!!!!
