1zucchini, thinly sliced

14 oz (400 g)dry spaghetti noodles

¼ cup (38 g)sun-dried tomatoes in oil, drained

¼ cup (31 g)roasted walnuts

1½ cups (207 g)frozen green peas

Directions
- Add the oil to a large pan on high heat. When hot, add the bell peppers in a single layer. Sprinkle over a bit of salt and pepper. Cook until blistered, then flip to cook on the other side*.
- Push the blistered bell peppers to the side of the pan. Add more oil and cook the garlic until lightly golden, about 2 - 3 minutes. Transfer everything to a food processor or blender.
- Return the same pan to the heat, and add more oil and zucchini. Sprinkle over salt and pepper, and try not to disturb the zucchini as it cooks. Flip only when golden. Meanwhile, cook the pasta in a large pot of salted boiling water.
- Returning to the food processor, add in the sun-dried tomato, and walnuts. Blend until smooth, but some small chunks can remain, if desired.
- In the last two minutes of the pasta cooking, add the peas to the cooking water. When the pasta is al dente, drain. Then return the drained pasta to the pot. Add the cooked zucchini and blended red bell pepper mixture to the pot. Toss everything to coat.
- One heated through, serve while hot. Garnish if desired, and enjoy!

I really enjoyed this recipe. I think it is worth taking the time to grill the peppers at home as I find jarred ones to be a bit too sweet. I found that I added a little more salt than I thought I'd need, but that helped to balance the flavours. I found this to be such a satisfying dish thanks to the peas and the walnuts and it isn't too much work, even grilling the peppers for a weeknight meal.
First PML recipe I made and absolutley love it! It’s very filling and it inspired me to eat vegan dishes much more often :)! Can’t wait to try more recipes

Absolutely delicious! I did a weird substitution so I'm sharing it here: I was out of sun-dried tomatoes but still had the jar with oil, so I used 1 tbsp tomato paste (for the rich umami taste) and 2 tbsp sun-dried tomato oil. Worked out very well!
This came out delicious. I skipped the zucchini as I didn’t have any but the taste was still great.

Amazingly easy and delicious! I’ve had this on regular rotation for a long time now. I use pine nuts instead of walnuts due to nut allergy. One of my fav PUL recipes 👏

Really lovely when I got to the sauce but it lacked a little bit of body so I pan fried some smoked tofu slices to go on top. O think next time I need to use fresher vegetables and less pasta.

Delicious recipe! I omitted the peas and switched the type of pasta cause of personal preference and it ended up great :) honestly maybe felt like more than 4 servings! Lots of great left overs
Love this recipe! I swapped the fresh bell peppers for roasted bell pepper from the glass to speed things up a little. This could easily become a favorite weeknight dinner.
Hmm, we found this to be a bit underwhelming. The pesto was quite bland and it was not enough to get a creamy pasta. It was a bit dry. I used fresh bell peppers and roasted them as instructed. Maybe it’s more flavorful with store bought grilled peppers.

My boyfriend, who is a body builder and swears he needs his protein badly, dug in and exclaimed 'oh, my god, this is body building food. And it's sooo good.' It made me so proud.
For extra protein I added three times the nuts using cashews and walnuts. To the pesto, I added nutritional yeast.
This meal was good, quick and easy. I used a romano pepper instead of a bell pepper but I didn't really taste it in the end... I was looking forward for this taste so I'm a bit disappointed. I will give it another go and if not, I'll add more spices to make it more tasty!
Also I added some water in the pepper paste to make it like a sauce rather than a dry paste. Enjoy it overall :)

The recipes I've tried are amazing. I used to live in a dry desert climate in California, and all the recipes I cooked there tasted amazing. Recently I moved to Texas where it is humid. I noticed that when I cook now, the recipes taste more bland. I want to know if there's any way to make it more flavorful again? Is the climate changing how the food cooks?
This is so delicious. I swap the walnuts for almonds. I also do skip the half-moon zucchinis and instead swap half the pasta (or 70% pasta) for zoodles. This way I can hide the zucchini and make this a vegetable-centric versus carb-centric meal. My kids, who don't eat zucchini, don't even notice because it's all covered in this amazing red sauce! They don't usually eat peppers or tomatoes either. I am so happy to serve them something they love that is so good for them and enjoy the meal too!

Lately, I've been trying out many PUL recipes and this one reminds of one meal served at one of my fav healthy and vegan restaurants. The only thing that doesn't work out for me is that the sauce doesn't become really saucy but instead chunky. I think it would be even more delicious if all the noodles were evenly coated, but it has got to do with my food processor, which has only 300W.

Great recipe! Just recently bought a new foodprocessor so we tried this recipe out for a family dinner and it was a hit! Even though all of my family love their meat and were skeptical, they loved it! It's very easy to make aswell, especially when you use the jarred peppers aswell like we did. I did add some extra salt to it for myself and ommited the peas (did try them with the peas but didn't like the taste a lot), so I think next time I might try it with some brocolli which I love a lot and saw someone else mention in the reviews. Either way would totally recommend this! It's quick and easy, healthy, packed with nutrition and very easily adjustable vegetable wise aswell as the taste isn't overpowering! So excited to try out more of your pasta recipes :)!

I replaced the green peas with roasted broccoli. I also replaced the walnuts with cashews and added some union. But wow, it was so so delicious. Even my father loved it though he hates pasta. Thank you so much Sadia!
I added a base of baby spinach on my plate before serving. And drizzled some hemp seed and flax seeds on top.

I used a small fresh tomato instead of the sun dried tomatoes, and cooked the peppers in the broiler instead of on the pan. I also peeled off the charred skin of the peppers. It was pretty good!

I was surprised how sweet and full of flavours this meal without suger or any sweetener, its amazing how good and healthy at the same time! I cook only for myself so this portion provides me food for days and I can not be bored with it! And the scent in the house during the cooking is absolutely a big plus ;) Oh yeah, and it is not hard to make or takes a long time at all.

I'm newly vegetarian (planning on going vegan someday) and I've been loving salivating while looking through your videos for quite sometime, but when i saw this recipe i knew i had to try it. And I'm so glad i did! It's delicious and makes me feel so good knowing that I'm not eating just another soy burger. Mine didn't come out as saucy as in the video but I'm positive it was because i made too much spaghetti, but overall it's a true delight. I will be taking this into my menu for sure, Thank you!♡

So, my mom, brother and myself try to have dinner once a month. Every time I have to cook (we rotate each time) I have no clue on what to make. My brother doesn’t eat meat, I don’t eat dairy and my mom is quite a picky eater so I decided to make this for dinner and oh my goodness! It was such a hit! I can’t believe how good it tasted, especially coming from eating meat all the time. I did add sautéed onions along with some red pepper flakes. It was so good!
