Directions
- Line a baking tray and preheat the oven to 450°F (230°C)*.
- Add the bell peppers to the tray and brush over the oil. Roast for 20 minutes, flipping once halfway.
- Then add the raw walnuts to the baking tray and continue to roast for another 5 - 6 minutes. Remove from the oven. Once cool enough to handle, pull the skin off of the bell peppers.
- Place all the ingredients (except for the walnuts) in a food processor and blend until smooth. Then add the walnuts and blend only momentarily so the walnuts are coarsely chopped to give the dip some texture.
- Taste test, add more seasoning if desired, and enjoy!
Notes
- †Speed it up by using jarred roasted bell peppers.
- * We used top and bottom heating (not fan-assisted/convection).

- Store in an airtight container in the fridge for up to 4 days.

This is so delicious 😋 I've been looking for a nice vegan dip as I'm not a fan of either humus or guacamole and this hits the spot perfectly with some veggies or pitta strips! I ended up leaving out the garlic as I'm not a fan of eating it raw so would probably roast it in with the peppers and walnuts next time and add some extra walnuts to the roasting tray to crumble on top of the dip to serve 🤤
I made this recipe for board game night, everybody loved it, we couldn't stop eating! 😀
I did not have breadcrumbs, so I dried a whole grain tortilla in the oven in the last five minutes together with the walnuts, and used that in the blend.
I recommend chopping the roasted walnuts and adding them to the spread instead of adding the whole nuts into the blender - the paste is so thick my blender refused to chop them 😜 😀
The taste is great, i added some water as the paste was a bit dry. But really recommend 👍
