I tried this black bean dip recipe and loved it! I made my own vegan sour cream using cashews and lemon juice, and it worked beautifully. Due to time constraints, I skipped cooking the cherry tomatoes and instead chopped them up into a fresh pico de gallo to top the dip, which added a bright and refreshing contrast. The spices were well-balanced, and the dip had just the right amount of heat. Definitely a recipe I’ll be making again!

Really tasty bean dip, and I love the extra tartness and creaminess from the sour cream (so clever, why have two good things separated when they can be mixed😋). I used more cilantro and jalapeño than instructed, but I like the strong flavour to complement the mild beans. Super good together with salty seed crackers for afternoon snack
