I loooved the combination of the mango with the onions and the dressing! Black beans are nearly impossible to get where I‘m from so I used big white beans and edamame, still tasted well balanced 😊
Simple, quick and delicious. Can easily be meal prepped also. Mine looked a little different due to using red quinoa but oh, the flavour - perfect!! 😃
Love it, just wondering to swap red bell peppers with any other raw veggie like cucumber which would taste nice in its raw form, because red bell pepper taste sharp uncooked.
This is now a regular meal in our household. It's so delicious! I'm thinking of serving it tomorrow for some friends and I wonder if you can advise me on something it would go well with. I thought perhaps the chickpea breakfast tortilla.
