Perfect recipe! Love it as a meal prep item—even better the next day. I just add avocado as I go. I may sub tomatoes for red pepper and add even more delicious dressing & mangoes next time.

Beautiful and delicious! Take care not to overcook your quinoa, as it can make the salad mushy (Oopsie), but it was still tasty!

I loooved the combination of the mango with the onions and the dressing! Black beans are nearly impossible to get where I‘m from so I used big white beans and edamame, still tasted well balanced 😊

Love it, just wondering to swap red bell peppers with any other raw veggie like cucumber which would taste nice in its raw form, because red bell pepper taste sharp uncooked.
