I made vegan ground from tofu. Together with buckwheat the filling had a nice meaty texture. Definitely one of my new favourite recipes
Gorgeous. The tomato sauce went so well with it, would be nice with pasta. I didn’t have veggie meat so I swapped for 120g lentils and used rice instead of buckwheat. Would make again.

I did what another commenter did and made it more tex-mex as well, subbing with mexican spices and mexican rice. It was delicious and really filling! One pepper is two servings for me.
Delicious! I used lentils in place of the mince. I am a huge fan of mashed potatoes, so I doubled the mashed potatoes portion. This dish was quite large, so I ate half and saved the remaining half for later. It was very filling. I’d certainly make it again.
what a great dinner recipe! i made substitutes based on what i had, making it more “tex mex” inspired than what was written. most notably, subbing in red enchilada sauce for the tomatoes and barley for the groats/rice. instead of mashed potatoes, i made spanish rice. i added cayenne for extra spice, too. i like the customization you can do with stuffed peppers + this recipe is a great playground to experiment :)

Omg! What an amazing recipe! I was a bit doubtful on the timing of this recipe but it was actually quicker (I like my bell pepper still a bit crunchy). I swapped the cashews for sunflower seeds since I had those. Fully recommend if you have to make a meal for a special occasion to impress your guests.
Delicious. It is quite a bit of work but not difficult. It felt festive and nostalgic. My husband really enjoyed it too.

I love stuffed peppers. Instead of vegan minced meat, I used canned brown lentils. I added a tsp of red curry paste to the sauce. Very tasty!

Made it with rice and it worked really good. Next time I will add some Letcho or something that brings a little more spice. But the Cashews in the filling will stay - they are so good ✨
This was very lovely. Replaced the wheat and cashews with some quinoa and had it with sweet potato chips. I also left out the water in the sauce which i would recommend doing. Next time I would also reduce the sugar as it was fairly sweet but possibly this was due to having it with sweet potato rather than normal mash so might have to experiment!

Such a great recipe! The only ingredient I replaced was potato. Instead of the normal potato I used sweet potato, because I already had it. I also ate the meal with a piece of gluten-free pita bread. So yammy! :-P
Made this with bulgur instead of buckwheat, also worked great 😋 and as many people made more of the mash
Loved these - so filling and easy. I didn't have buckwheat so substituted for rice which worked well. My partner also loved them. I had some filling leftover so mixed with a bit of the sauce and had it with pasta.
This recipe was today's lunch. 😋 I didn't have buckwheat, so I substituted it for rice. For the vegan mince , I didn't have tempeh, so I substituted mushrooms 😅. This turned out so yummy 😋. I made the mashed potatoes as well. I had to cut a bell pepper in half since they were so huge and filling. I love❤️ your recipes because they are inclusive of yummy spices & veggies 😋. I need to add more veggies to my diet. Soooo helpful. Thank you 😊 🙏.

Super delicious recipe. Very warm, comforting and flavourful. I used lentils instead of the vegan mince and it turned out great. I would probably double the mashed potatoes next time, but otherwise perfect!

It would be very handy if at some point you could develop a chart with some ingredients and their substitutes. Inn some recipes it's difficult too find plant based meat and I know some people who don't like at all the feeling of meat. That would be very well perceived 🙌
PS awesome recipe! Brings me a lot of memories. In Cyprus - where I come from - we traditionally stuff them with rice, and we add dried mint, parsley, cinnamon, lemon, bullion, tomato sauce and olive oil. We also stuff different kind of veggies like tomatoes, zucchini, eggplant, potatoes, zucchini flowers and grape leaves
I love this recipe. It’s so tasty and full of protein. I switch out potatoes for brown rice and skip on the butter. Other than that this is perfect! I can’t believe how amazing this app is! Everything I always wanted. Made making dinner so simple!
