I scaled this up to make 6 portions but only had two tins of tomatoes. This I felt was enough anyway! I got moans and complains that you canβt have soup for dinner but he gave in and thought it was yum! Served it with some garlic bread! Simple and tasty, one pot dish!

This is such a comforting bowl of food. I've been looking forward to the onset of fall just to enjoy this again. I usually replace the veggie ground beef with the lentils, it's such a nice way to get your daily dose of lentils and the textures are just so comfy. I also never have the time to make an actual lasagna, so this is perfect. 10/10, I keep telling people about this.
Easy and delicious with hardly any dishes to wash. Perfect for a lazy weekend.

Lasagna without needing to use an oven. Whatβs not to love?
We might try a stronger mushroom next time because we love mushrooms. I could easily add more leafy greens, like kale. Also, we jazzed it up by adding a dollop of vegan ricotta cheese and a dollop of vegan pesto to our bowls. Wow!

I love this recipe. Today is probably the fourth time I've made it in as many months. This time I added a splash of red wine with the mushrooms and soy ground. Not sure what it did exactly, but I felt very chef-y (LOL!)

I do have a question, is the measurement of of the lasagna sheets correct? Since I donβt have a scale maybe I just estimated wrong, but I think I put around 200g for 4 portions.

Hey Azul, we're so glad the lasagna soup was enjoyed and thanks for the question. We used square sheets for this soup. Our lasagna sheets are around 20 grams each and we used about 5 in this recipe for 4 servings. If you are using the long, rectangular lasagna noodles, they are likely twice the weight, but this soup can certainly handle extra lasagna noodles!
This was so good! Could not stop eating it! Will definitely make again.

Super quick and easy recepie! In my opinion the soup came out too sour. Would probably skip the balsamic vinagre for next time! I added agave syrup and some soy sauce to deepen the flavor and sweeten it up! β€οΈ

This is the first recipe I made from the app since I bought it yesterday. I have to tell you that this app is awesome because it has so many helpful features. I love the fact that it has it's own timer, that you have the measurements with every step and that the screen stays on while cooking. As for this recipe, it came out very good although I have used a Beyond Meat burger (minced) instead of the minced soy. Thank you for the app and all the good recipes!

Snow has started falling here in Stockholm and this was the perfect cozy recipe! I upped the recipe to make 4 but to be honest the portions are so generous, the original recipe of 3 bowls would have stretched out to 4! Super filling! I swapped out fresh spinach for frozen and topped it with lots of nutritional yeast!

A bit more involved and took longer than listed for prep. It took me around 1.5hrs of mostly doing something from start of prep to completion of dish. I miscalculated some items since I had to do conversions/math to get all the correct measurements from the packaged ingredients not matching what is needed. So for taste, even tho I had to make some swaps, it is still pretty good. I used lentil lasagna.

Mmmm...this is yummy! I had the same problem mentioned earlier: noodles sticking together. I did stir quite a bit as suggested, but next time I might use a different pasta.
I added some thin sliced zucchini and some leftover olives, and this is definitely a keeper!

I've made this recipe a number of times and it's one of my son's favourite (and he's a super picky eater). He asks me for it some times! I would just add more water than what's called for in the recipe as mine seems to dry out quite a bit. Maybe my lasagna noodles just take longer to cook. I'll continue to make this often. I made this with lentils and added vegan cheese on top and it was delicious! I have a question though as I had a problem with the lasagna noodles. I stirred the soup for a while once I added them in but they ended up sticking together a lot and struggled to cook because of it so I spent ages trying to separate them myself. Would you have any tips to prevent that? Thanks a lot for another great dinner :D

We're so glad the soup is being enjoyed, Aurora! Pasta sticking together is sometimes from the starch. Adding the salt, being sure to wait until the pot is boiling before adding the lasagna noodles, and stirring more often should help. Some people also find that rinsing noodles in cold water before adding to the boiling soup contents or adding a touch of oil can help. Do let us know how it goes if you give the soup another try π

Hi! This looks delicious! Can't wait to try. I love pickuplimes!! 2 quick questions - - could I substitute the balsamic vinegar? Google says a replacement is red wine vinegar + some maple syrup, wondering your thoughts on that or any other replacements. Want to make this perfect and if balsamic vinegar adds a little oomph I don't want to miss out on that! - Could I sub fresh for canned diced tomatoes? If so, do I need to adjust any salt or anything like that? Thanks so much!

Hey there, Shivani, thanks for the questions! Balsamic vinegar helps to add flavour and depth to the soup. You could omit it, or experiment with substitutions such as an alternative vinegar with sugar (red wine vinegar and some maple syrup sounds lovely), soy sauce, or lemon juice. You can also use fresh tomatoes in place of the canned if desired. We'd recommend giving the soup a taste test and adding more spices or salt if needed. You can also add some water if it needs a bit more liquid π

My family is very opposed to vegan food, insisting the flavor is always lacking but this dish is a winner in my home! This says a lot considering in my culture we primarily eat meat or seafood with rice for most meals.

Hi PUL team !
I made this yesterday afternoon, but came dinner time, the soy veggie ground had completely absorbed all of the liquid. It became like pasta with vegan bolognese sauce (I left it for around 5 hours). We still enjoyed it but unfortunately the flavor of the soy veggie ground took over the other flavors. I will try this recipe again with lentils to retain the soupy aspect.

Hey Lynda, thanks so much for taking the time to share your experience, and I'm sorry to hear it wasn't quite as you'd hoped. My theory might be that the veggie ground you used was a dehydrated version - could that be possible? The soy veggie ground we use from our local grocery store doesn't absorb any liquid, but I know there are some "textured vegetable proteins" on the market that do indeed absorb a considerable amount of liquid. I'd check your package instructions. If it indicates to first hydrate the soy veggie ground with water, you might want to do that first separately, and then add it to the soup once re-hydrated. I hope this helps for now, and I'm glad to hear the taste will still enjoyed nonetheless π

This is on regular rotation at our house. I make it with ground beef but will try the lentil option soon. Sometimes I add a can of vegetable juice to up the flavor a bit at the end. Crusty bread and a fresh salad and you're good to go! Even better the next day. Thanks for the awesome recipe!

This is an amazing soup! The concept of Lasagna Soup blew our minds so we had to try it. I made this recipe 3 defferent ways: actual mince (before we managed to introduce more plant based meals in our diet), Quorn mince (alright but I wasn't a big fan of the texture as I found it too soft), and Pui lentils as we couldn't find brown lentils (this was by far the BEST and I much preferred it to the actual beef). An amazing recipe, simple to make and it just looks and tastes amazing π₯°

I love lasagna, but the traditional way is so time consuming. I love that this whips up pretty fast with little prep on my part. Itβs even speedier since I was gifted an Instant Pot. :) Itβs one of my go to soups/stews for winter (which last far too long here in Saskatchewan). Even my picky 2 and 7 year olds gobble this up.
Love this recipe - make it all the time! Turns out thick and hearty, almost more like a stew than a soup - delicious. (Could also be because I make it without mushrooms - just not my thing, but still delicious!)

This soup is AMAZING. I love one pot meals and this one is so good. You get the comfort of lasagna but so much quicker and easier. I love adding a sprinkle of vegan cheese on top. If you add less liquid, it also makes a great, hearty pasta dish.

This recipe is amazing! It's so creamy it doesn't need anything like cheese and it's so easy to prepare. What I like about this recipe is that you can get a lot of veggies in without feeling like you're eating super healthy. I imagine it would be great for kids.

so so good! i made this 100 times. instead of the mushrooms you can use 2 Tbsp. porcini powder (i make my own by grinding dryed mushrooms). For the soy veggie ground i use brown cooked lentils. thank you to PUL! The new website is great :-)

I scaled this up to make 6 portions but only had two tins of tomatoes. This I felt was enough anyway! I got moans and complains that you canβt have soup for dinner but he gave in and thought it was yum! Served it with some garlic bread! Simple and tasty, one pot dish!

This is such a comforting bowl of food. I've been looking forward to the onset of fall just to enjoy this again. I usually replace the veggie ground beef with the lentils, it's such a nice way to get your daily dose of lentils and the textures are just so comfy. I also never have the time to make an actual lasagna, so this is perfect. 10/10, I keep telling people about this.

We might try a stronger mushroom next time because we love mushrooms. I could easily add more leafy greens, like kale. Also, we jazzed it up by adding a dollop of vegan ricotta cheese and a dollop of vegan pesto to our bowls. Wow!

I love this recipe. Today is probably the fourth time I've made it in as many months. This time I added a splash of red wine with the mushrooms and soy ground. Not sure what it did exactly, but I felt very chef-y (LOL!)

This is totally my favorite soup of all time. I don't make it that often, but it's always such a treat. It tastes way better with the mock ground beef than the lentils, in my opinion.
Super quick and easy recepie! In my opinion the soup came out too sour. Would probably skip the balsamic vinagre for next time! I added agave syrup and some soy sauce to deepen the flavor and sweeten it up! β€οΈ
This is the first recipe I made from the app since I bought it yesterday.
I have to tell you that this app is awesome because it has so many helpful features. I love the fact that it has it's own timer, that you have the measurements with every step and that the screen stays on while cooking.
As for this recipe, it came out very good although I have used a Beyond Meat burger (minced) instead of the minced soy.

Snow has started falling here in Stockholm and this was the perfect cozy recipe! I upped the recipe to make 4 but to be honest the portions are so generous, the original recipe of 3 bowls would have stretched out to 4! Super filling! I swapped out fresh spinach for frozen and topped it with lots of nutritional yeast!

A bit more involved and took longer than listed for prep. It took me around 1.5hrs of mostly doing something from start of prep to completion of dish. I miscalculated some items since I had to do conversions/math to get all the correct measurements from the packaged ingredients not matching what is needed. So for taste, even tho I had to make some swaps, it is still pretty good. I used lentil lasagna.
I love this recipe. Works well with a can of black beans instead of veggie ground beef. I also use an entire pound of mushrooms. Super delish!

Mmmm...this is yummy! I had the same problem mentioned earlier: noodles sticking together. I did stir quite a bit as suggested, but next time I might use a different pasta.
I added some thin sliced zucchini and some leftover olives, and this is definitely a keeper!

I've made this recipe a number of times and it's one of my son's favourite (and he's a super picky eater). He asks me for it some times! I would just add more water than what's called for in the recipe as mine seems to dry out quite a bit. Maybe my lasagna noodles just take longer to cook. I'll continue to make this often. Thanks for the great recipe. BTW love your website!!! So easy to use and to check/mark the items that I've done as I go through the recipe. Well done :)

This is the only vegan meal I've made for my meat eater family that brings them in for seconds. The leftovers are also scrumptious but are rare- I've grown accustom to making a bigger batch now though!

I made this with lentils and added vegan cheese on top and it was delicious! I have a question though as I had a problem with the lasagna noodles. I stirred the soup for a while once I added them in but they ended up sticking together a lot and struggled to cook because of it so I spent ages trying to separate them myself. Would you have any tips to prevent that?

2 quick questions -
- could I substitute the balsamic vinegar? Google says a replacement is red wine vinegar + some maple syrup, wondering your thoughts on that or any other replacements. Want to make this perfect and if balsamic vinegar adds a little oomph I don't want to miss out on that!
- Could I sub fresh for canned diced tomatoes? If so, do I need to adjust any salt or anything like that?
